Tips for success
For the best texture, choose country-style ribs that are well-marbled—the fat keeps them moist during the long cook. If you prefer a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce to the sauce before pouring.
You can also add sliced onions or bell peppers to the bottom of the slow cooker for extra vegetables. The sauce will be even richer if you let the ribs rest in the sauce for 10 minutes after cooking.
To achieve a thicker, more caramelized glaze, you can transfer the cooked ribs to a baking sheet and broil for 2-3 minutes until the edges char slightly. Watch closely to avoid burning.
Alternatively, remove the ribs from the slow cooker and simmer the sauce on the stovetop until reduced by half. This concentrates the flavors and makes a perfect sticky coating. Either method adds a delightful depth to the dish.
Variations
- Spicy Pineapple Ribs: Add 1-2 minced chipotle peppers in adobo sauce or 1 teaspoon of red pepper flakes to the sauce. The heat balances the sweetness beautifully. Garnish with fresh cilantro.
- Hawaiian-Style Ribs: Swap the molasses garlic BBQ sauce for a teriyaki or Hawaiian barbecue sauce. Add 1/4 cup of soy sauce and 1/4 cup of pineapple juice to the pot for extra flavor.
- Smoky Bourbon Ribs: Replace 1/2 cup of the BBQ sauce with bourbon and add 1 teaspoon of smoked paprika. The bourbon adds depth and a subtle smokiness. Cook as directed.
- Pineapple Pork Tacos: After cooking, shred the pork and serve in warm corn tortillas with the pineapple, crumbled queso fresco, and a squeeze of lime. Drizzle with extra sauce.

Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of water or pineapple juice if needed to loosen the sauce.
This recipe is perfect for making ahead. Assemble the ribs, pineapple, ginger, and sauce in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve these ribs with a side of steamed rice or creamy mashed potatoes to soak up the extra sauce. A simple green salad with a tangy vinaigrette balances the sweetness.
For a Southern touch, add collard greens or cornbread. The pineapple rings make a beautiful garnish—place one on top of each serving.
These ribs are also fantastic in sandwiches. Pile the meat onto soft buns, top with pickles and coleslaw, and drizzle with extra sauce.
For a party, shred the meat and serve on slider buns with a spoonful of sauce. Leftovers can be tossed with barbecue sauce and served on nachos or tacos. The possibilities are endless.

Slow-Cooker Pineapple Molasses Country Ribs

Ingredients
- 3 lb boneless country-style pork ribs
- 1 can (20 oz) pineapple rings in juice, drained
- 2 tbsp fresh ginger, grated
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- Place the country-style pork ribs in the bottom of a 6-quart slow cooker in a single layer, overlapping as needed. Lay the pineapple rings over the ribs, tucking them between and around the meat. Sprinkle the grated ginger evenly over the top.
- Pour the molasses garlic BBQ sauce over the ribs and pineapple, using a spatula to spread it evenly. Make sure the sauce coats the top of the meat and drips down between the pieces.
- Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the ribs are fork-tender and easily pull apart. The sauce will darken and thicken as the meat cooks. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Let the ribs rest in the sauce for 5 minutes. Using tongs or a carving fork, transfer the ribs to a serving platter or individual plates. Spoon some of the sauce and pineapple over the top before serving.
