Tips for success
For the most flavorful results, choose a barbecue sauce that lists bourbon or maple as a primary ingredient. If you prefer a spicier kick, add a pinch of cayenne or a few dashes of hot sauce to the slow cooker before cooking.
You can also layer in sliced onions or garlic at the bottom of the slow cooker for extra depth, though the video keeps it simple—just ribs, pineapple, ginger, and sauce.
To thicken the sauce further, remove the ribs and pineapple to a plate, then transfer the sauce to a small saucepan and simmer over medium heat for 5 to 10 minutes until it reduces and thickens.
If the sauce becomes too thick, thin it with a little pineapple juice or water. For a smoother texture, you can blend the sauce with an immersion blender, but leaving it chunky adds rustic appeal.
Variations
- Spicy Chipotle: Add 2 chipotle peppers in adobo sauce, minced, along with the barbecue sauce. This adds a smoky heat that pairs well with the sweet pineapple. You can also increase the ginger to 3 tablespoons for extra zing.
- Hawaiian Style: Replace the barbecue sauce with 1 cup ketchup, 1/2 cup brown sugar, 1/4 cup soy sauce, and 2 tablespoons rice vinegar. This creates a sweet-savory glaze reminiscent of Hawaiian plate lunch. Omit the bourbon.
- Garlic-Herb: Add 4 cloves garlic, minced, and 1 teaspoon dried thyme to the sauce before pouring. This adds an aromatic, savory layer that balances the sweetness. You can also use a honey garlic BBQ sauce instead of maple bourbon.
- Fruity Twist: Replace the pineapple rings with 1 cup diced mango or peaches. Follow the same layering method. The fruit will break down and meld into the sauce, creating a tropical, chunky glaze.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water or juice if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a covered saucepan over low heat, stirring occasionally, until hot and bubbling. Add a splash of water or pineapple juice if the sauce is too thick.
Store leftover ribs and sauce in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even better. Reheat gently in a saucepan over low heat or in the microwave, adding a splash of water or pineapple juice if the sauce has thickened too much.
The ribs can be assembled in the slow cooker insert up to 24 hours ahead. Cover and refrigerate, then place the insert in the slow cooker base and cook as directed. You may need to add 30 minutes to the cooking time since you’re starting from cold. Alternatively, cook the ribs fully, then cool and refrigerate them in the sauce; reheat gently before serving.
Serving ideas
Serve the ribs hot, straight from the slow cooker, with the caramelized pineapple rings and extra sauce spooned over the top. This dish pairs beautifully with creamy coleslaw, cornbread, or steamed rice to soak up the glossy sauce.
For a low-effort side, toss a bag of frozen green beans with butter and garlic and microwave until tender—simple, quick, and a nice contrast to the rich meat.
For a more substantial meal, pile the ribs onto soft buns and top with a little coleslaw for a pulled-pork-style sandwich. The pineapple can be chopped and mixed into the slaw for a sweet-tangy twist.
If you’re feeding a crowd, keep the slow cooker on the warm setting and let guests serve themselves—this recipe is made for buffet-style dining. Garnish with chopped scallions or fresh cilantro if you like, but it’s delicious as is.

Slow-Cooker Pineapple Maple Bourbon Country Pork Ribs

Ingredients
- 3 lb boneless country-style pork ribs
- 1 can (20 oz) pineapple rings in juice, drained
- 2 tbsp fresh ginger, grated
- 1 1/2 cups maple bourbon barbecue sauce
Instructions
- Place the boneless country-style pork ribs in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Spread the pineapple rings over the ribs, tucking a few between pieces. Sprinkle the grated ginger evenly over the top.
- Pour the maple bourbon barbecue sauce generously over the ribs and pineapple, making sure every piece is coated. Use a spoon or spatula to spread the sauce evenly, but do not stir the ingredients—leave the pineapple rings on top.
- Cover the slow cooker with the lid and cook on LOW for 6 to 8 hours, or until the ribs are fork-tender and easily pull apart. Avoid opening the lid during cooking, as this releases heat and extends the cooking time. Let it rest for 3 minutes before slicing.
- After 6 hours, test the ribs with a fork. The meat should shred easily and register at least 145°F (63°C) on an instant-read thermometer. If not yet tender, continue cooking for another 30 to 60 minutes. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for 5 minutes. This allows the juices to redistribute and the sauce to thicken slightly.
- Using a fork, lift the ribs out of the slow cooker and transfer them to a serving platter. Arrange the pineapple rings alongside or on top. Spoon some of the sauce from the slow cooker over the ribs just before serving.
