Before you start
Before you start, make sure your slow cooker is clean and dry. Pat the ribs dry with paper towels and, if desired, remove the thin membrane from the back of the racks for easier eating. Drain the pineapple rings, reserving the juice for another use or to add a splash to the pot if you like extra moisture.
Grate the fresh ginger and measure out the barbecue sauce. Have your tongs and a serving plate ready. This recipe is truly a dump-and-go affair, so the only real prep is getting the ingredients together.
Ingredients at a glance (4)
- 2 racks baby back pork ribs (about 3 lb total)
- 1 can (20 oz) pineapple rings in juice, drained
- 2 tbsp fresh ginger, grated
- 1 1/2 cups maple bourbon barbecue sauce
Instructions
Layer and Sauce
- Layer the Ribs and PineapplePlace the racks of baby back ribs side by side in the bottom of a 6-quart slow cooker. They can overlap slightly if needed. Arrange the drained pineapple rings on top of the ribs, tucking a few between the racks if necessary. Sprinkle the grated ginger evenly over the pineapple and ribs.Look for The ribs should be in a single layer as much as possible, with pineapple covering most of the surface.Tip If the racks are too long, cut them in half to fit comfortably.
- Pour the Sauce Over EverythingPour the maple bourbon barbecue sauce over the ribs and pineapple, using a spatula to spread it evenly. Make sure the top of the ribs is well coated, but do not stir — the sauce will combine with the meat juices as it cooks.Look for The sauce should cover the ribs in a thick, even layer.Tip If the sauce is very thick, add a few tablespoons of water to the bottom of the pot to help it create steam.
At the end of this phase, the slow cooker contains the ribs in a single layer, topped with pineapple rings and a sprinkling of grated ginger. The barbecue sauce is poured over everything, creating a thick, glossy coating. The pot looks colorful and inviting, with the sweet aroma of pineapple and ginger already beginning to mingle with the smoky sauce. There is no need to stir — just make sure the sauce covers the top of the ribs evenly.
Slow Cook to Tender
- Cook Low and SlowCover the slow cooker and cook on low for 6 to 7 hours, until the ribs are tender and the meat easily pulls away from the bone. Do not lift the lid during the first 5 hours to keep the heat steady. Let it rest for 3 minutes before slicing.Look for The meat should be very tender, and the sauce should be bubbly and fragrant.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip If the sauce looks too thin at the end, remove the ribs and simmer the sauce on the stovetop to reduce.
- Check for DonenessUse a fork to test the ribs: the meat should be so tender that it nearly falls off the bone. If it is not yet that tender, continue cooking for another 30 minutes and check again. When the ribs are done, the internal temperature should read at least 145°F (63°C), but for fall-off-the-bone texture, they will be well above that.Look for A fork inserted into the meat should twist easily with no resistance.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip For even more tenderness, let the ribs rest in the slow cooker on warm for 30 minutes before serving.
After 6 to 7 hours on low, the slow cooker is filled with a bubbling, aromatic sauce. The ribs are deeply browned and the meat is visibly shrinking from the bones. The pineapple rings have softened and caramelized, turning a deep golden color.
The kitchen smells sweet and smoky, and the sauce has thickened slightly. A fork inserted into the meat meets no resistance, and the meat easily pulls apart. The ribs are ready to be rested and served.
Rest and Serve
- Rest the RibsTurn off the slow cooker. Using tongs, carefully transfer the ribs to a cutting board. Let them rest for at least 3 minutes before slicing. This allows the juices to redistribute and the meat to set slightly, making it easier to handle.Look for The ribs will be very tender and may start to pull apart as they rest.Tip Use a sharp knife to slice between the bones for clean portions.
- Serve with Extra SauceSpoon some of the sauce from the slow cooker over the ribs. Serve the ribs hot, with the caramelized pineapple rings on the side. The sauce can be strained and served on the side if desired.Look for The ribs should be glistening with sauce and the pineapple should be caramelized and golden.Tip If the sauce is too thin, simmer it in a small saucepan for 5 minutes to thicken.
Once the ribs are transferred to a cutting board, they are glistening with a sticky, caramelized sauce. Letting them rest for a few minutes allows the juices to settle. When sliced, the meat is moist and tender, with a beautiful pink smoke ring from the slow cooking. The pineapple rings are soft and sweet, and the extra sauce from the pot is spooned over the top. The dish is ready to be served hot, with the pineapple as a colorful garnish.
Common mistakes
One common mistake is lifting the lid too often during cooking, which lets out heat and extends the cooking time. Resist the urge to peek for at least the first 5 hours. Another mistake is using too little sauce, which can result in dry ribs.
Be generous with the barbecue sauce, making sure the ribs are well coated. Finally, avoid cooking on high for a shorter time — the low-and-slow method is essential for tender ribs. If you're short on time, you can cook on high for 3-4 hours, but the texture won't be quite as fall-apart.
How to tell it’s done
The ribs are done when the meat is so tender that it easily pulls away from the bone with a fork. A good test is to insert a fork into the thickest part of the meat and twist — it should turn without resistance.
The internal temperature of the meat should be at least 145°F (63°C), but for fall-off-the-bone texture, it will likely be higher. The sauce should be bubbling and slightly thickened, and the pineapple rings should be caramelized and golden. If the ribs are not yet tender, continue cooking and check every 30 minutes.
- Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
