Tips for success
For the best flavor, use a barbecue sauce that you love eating straight from the jar. Since it's the main seasoning, its quality matters.
If the sauce is too thick, you can thin it with a few tablespoons of pineapple juice or water. If it's too thin, let the slow cooker cook uncovered for the last 30 minutes to reduce.
To get those caramelized edges on the pineapple, you can briefly sear the rings in a hot skillet before adding them, but it's not necessary. The slow cooker will soften and sweeten them. If you want a thicker glaze on the ribs, broil them for 2–3 minutes after cooking, watching closely to avoid burning.
Variations
- Spicy Kick: Add 1–2 minced jalapeños or a teaspoon of chipotle powder to the sauce before pouring. This adds a smoky heat that complements the sweet pineapple and honey. Serve with extra hot sauce on the side.
- Citrus Twist: Replace the pineapple rings with orange slices or add the zest and juice of one orange. The bright citrus flavor cuts through the richness of the pork and pairs well with the ginger.
- Garlic Lover's: Add 4 minced garlic cloves along with the ginger. Garlic and barbecue sauce are a natural match, and the slow cooker will mellow the garlic into a sweet, savory note.
- Smoky Maple: Swap the honey hickory sauce for a maple barbecue sauce, or stir in 2 tablespoons of maple syrup. This deepens the sweetness and adds a distinct maple flavor that pairs beautifully with pork.

Leftover ribs can be stored in an airtight container in the refrigerator for up to 4 days.
The sauce will thicken as it cools; reheat gently on the stove or in the microwave, adding a splash of water or pineapple juice to loosen it if needed. The flavors continue to develop overnight, making leftovers even more delicious.
This recipe is perfect for making ahead. You can assemble the slow cooker insert with all the ingredients the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time because the ingredients start cold. Alternatively, cook the ribs fully, let them cool, and refrigerate; reheat gently before serving.
Serving ideas
Serve the ribs hot, piled on a platter with the pineapple rings nestled between the meat. Spoon the thickened sauce from the slow cooker over the top.
This dish pairs beautifully with classic barbecue sides: creamy coleslaw, cornbread, or a simple green salad. The sweet and smoky flavors also work well with mashed potatoes or roasted vegetables.
For a casual gathering, let guests build their own plates, offering extra sauce on the side. The ribs are also great in sandwiches—pile the shredded pork onto soft buns with a spoonful of sauce and pickles. However you serve them, the tender meat and glossy glaze are sure to be the star of the table.

Slow Cooker Pineapple Honey Hickory Country Pork Ribs

Ingredients
- 3 lb boneless country-style pork ribs
- 1 can (20 oz) pineapple rings in juice, drained
- 2 tbsp fresh ginger, grated
- 1 1/2 cups honey hickory barbecue sauce
Instructions
- Place the country-style pork ribs in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Arrange the drained pineapple rings on top of the ribs, tucking them between pieces so they nestle into the meat. Sprinkle the grated fresh ginger evenly over the pineapple and ribs.
- Pour the honey hickory barbecue sauce evenly over the entire surface of the ribs and pineapple, using a spatula to spread it into an even layer. Make sure every piece of meat is coated with sauce, but do not stir.
- Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the ribs are fork-tender and easily pull apart. The sauce will bubble and thicken as the meat releases its juices. Do not open the lid during the first 4 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- After the cooking time, test the thickest piece of pork with an instant-read thermometer. It should read at least 145°F (63°C). Then pierce the meat with a fork: it should shred easily. If not, continue cooking for another 30 minutes and check again. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for at least 3 minutes. This allows the juices to redistribute and the meat to firm up slightly for serving. Use tongs or a carving fork to transfer the ribs to a serving platter, leaving the sauce in the slow cooker.
- Arrange the pineapple rings alongside the ribs on a platter or individual plates. Spoon the thickened barbecue sauce from the slow cooker over the top. Serve hot, with extra sauce on the side if desired.
