Tips for success
For the most flavorful sauce, use a good-quality full-fat coconut milk. Shake the can well before opening to ensure the cream and liquid are combined.
If you prefer a thicker sauce, you can remove the lid for the last 30 minutes of cooking to let it reduce. Alternatively, whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons water at the end and cook for 10 minutes.
This dish is versatile—serve it over steamed jasmine rice, quinoa, or cauliflower rice for a lighter option. It also works well in tacos or lettuce wraps. The leftovers are even better the next day, as the flavors meld. When reheating, add a splash of coconut milk or water to loosen the sauce if needed.
Variations
- Add Heat: For a spicy kick, add 1–2 teaspoons of chili flakes or a minced fresh chili (like jalapeño or serrano) along with the spices. You can also stir in a tablespoon of sriracha or hot sauce at the end.
- Use Chicken: Swap the pork for boneless, skinless chicken thighs or breasts. Chicken thighs will stay moister; if using breasts, reduce the cooking time to 3–4 hours on LOW. Ensure the chicken reaches 165°F (74°C).
- Add Vegetables: Stir in 1 cup of sliced carrots or snap peas during the last 30 minutes of cooking for extra color and crunch. Or add 1 cup of drained canned chickpeas for more substance.
- Make It a Curry: Add 1 tablespoon of curry powder or Thai red curry paste along with the spices. This transforms the dish into a fragrant coconut curry. Serve with fresh basil or cilantro.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken; add a splash of coconut milk or water when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little coconut milk or water to loosen the sauce if needed.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools, so you may want to add a little water or coconut milk when reheating.
Reheat gently on the stovetop or in the microwave until hot, stirring occasionally. The pork remains tender and flavorful.
You can assemble the ingredients in the slow cooker insert the night before and refrigerate it covered.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start. Alternatively, cook the dish fully, let it cool, and refrigerate for up to 3 days before reheating.
Serving ideas
Serve the pork bites over steamed jasmine rice or coconut rice to soak up the creamy sauce. A side of sautéed greens or a simple green salad with lime vinaigrette balances the richness. For a low-carb option, serve over cauliflower rice or with warm tortillas and a sprinkle of fresh cilantro.
This dish also makes a great filling for tacos or burrito bowls. Top with sliced avocado, pickled red onions, or a squeeze of lime juice.
The sauce doubles as a dressing for the bowl. For a heartier meal, add black beans or roasted sweet potatoes. Leftovers can be turned into a quick stir-fry with vegetables.

Slow Cooker Pineapple Coconut Pork Bites

Ingredients
- 2 lb boneless pork shoulder, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1 medium red bell pepper, cut into 1-inch squares
- 1 tsp ground ginger
- 1/2 tsp garlic powder
- 1 can (13.5 oz) full-fat coconut milk
Instructions
- Place the cubed pork shoulder in the slow cooker insert, spreading it evenly over the bottom. The pork should cover the insert in a single layer as much as possible, though some overlap is fine.
- Scatter the pineapple chunks and red pepper squares over the pork. Distribute them evenly so every bite gets a little sweetness and color.
- Sprinkle the ground ginger and garlic powder evenly over the top. Use a small ramekin or your fingers to distribute the spices over the entire surface.
- Pour the coconut milk over everything in the slow cooker. Do not stir—just let the milk settle around the ingredients.
- Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the pork is fork-tender and cooked through. The pork should reach an internal temperature of 145°F (63°C) as a minimum, but for the most tender results, cook until it easily shreds or cuts with a fork. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the pork rest in the sauce for at least 3 minutes before serving. This allows the juices to redistribute and the meat to stay moist.
- Spoon the pork, pineapple, and pepper into serving bowls, ladling extra coconut sauce over the top. Serve hot, with rice or crusty bread if desired.
