Before you start

Before beginning, ensure all ingredients are measured and ready. Dice the Roma tomatoes finely to ensure they release their juices during the cooking process. If the pesto is stored in the refrigerator, let it sit at room temperature for a few minutes to make it easier to spread.

Verify that the slow cooker is clean and positioned on a heat-resistant surface away from any overhanging cabinets or curtains to allow proper ventilation during the long cook time.

Ingredients at a glance (7)
  • 4 pieces chicken breasts, boneless and skinless
  • 8 oz basil pesto
  • 2 cups diced Roma tomatoes with garlic and balsamic
  • 8 oz fresh mozzarella pearls
  • balsamic glaze, for serving
  • fresh basil ribbons, for serving
  • crusty garlic bread, for serving

Instructions

Assembly phase

  1. Prepare the slow cooker
Place the four chicken breasts into the base of the 6-quart slow cooker insert. Ensure they are arranged in a single layer to promote even cooking throughout the process.
Look for Chicken should be in a single layer.
Tip Patting the chicken dry before adding it to the cooker helps the sauce adhere better to the meat.
  2. Add aromatics and sauce
Spread the 8 ounces of basil pesto evenly over the top of the chicken breasts. Add the 2 cups of diced Roma tomatoes with garlic and balsamic directly over the pesto layer.
Look for Pesto and tomatoes should cover the chicken completely.
Tip Use a silicone spatula to spread the pesto to the edges of the chicken.

At the end of this phase, the chicken should be neatly arranged in the bottom of the slow cooker, completely covered with a thick, aromatic layer of pesto and diced tomatoes. The kitchen should smell faintly of fresh herbs and garlic. Ensure no pieces of chicken are overlapping significantly, as this will help the heat circulate evenly during the slow cooking process that follows.

Slow cooking phase

  1. Slow cook the chicken
Close the glass lid of the slow cooker. Set the cooker to the LOW setting and cook for 4 hours until the chicken is tender and reaches an internal temperature of 165°F (74°C).
Look for Chicken is tender and cooked through.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid opening the lid frequently, as this releases heat and increases the cooking time.

After 4 hours, the chicken should be tender and cooked through, with the sauce reduced to a thick, flavorful consistency. The tomatoes should have broken down significantly, creating a rich base. The chicken should be very easy to pierce with a fork, indicating that the fibers have softened, which is the perfect condition to proceed with adding the final topping of mozzarella pearls.

Finishing phase

  1. Melt the mozzarella
Scatter the 8 ounces of fresh mozzarella pearls evenly over the cooked chicken. Replace the lid and continue cooking for 10 minutes, or until the cheese is soft and gooey.
Look for Cheese is melted and bubbly.
Tip The residual heat of the sauce will help the mozzarella melt quickly.
  2. Serve the dish
Transfer the chicken to a serving platter. Drizzle with balsamic glaze and scatter fresh basil ribbons over the top. Serve immediately alongside warm crusty garlic bread.
Look for Everything is plated and ready for service.
Tip Let the chicken rest for 5 minutes before serving to ensure the juices redistribute.

Once the mozzarella pearls have melted, they should appear soft, gooey, and slightly stretchy. The balsamic glaze drizzle should add a dark, sweet contrast to the bright green pesto and red tomatoes.

The dish should look visually vibrant and smell intensely savory. Before serving, verify the chicken is fully cooked and that the cheese is melted to your preference for the perfect final presentation.

Common mistakes

A common mistake is using too much liquid in the slow cooker, which can dilute the concentrated flavors of the pesto and tomatoes. Stick to the specified amount of tomatoes and rely on the chicken's natural juices.

Another error is adding the mozzarella too early; the cheese will become rubbery or disappear into the sauce if cooked for the full duration. Always add the cheese only in the final 10 minutes of the cooking cycle to maintain the desired gooey texture.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) as measured by a meat thermometer inserted into the thickest part of the breast. The meat should be opaque throughout and pull apart easily with a fork.

The mozzarella should be fully melted and slightly browned in spots where it contacts the hot sauce. Let the chicken rest for 5 minutes before serving to ensure the juices are retained within the meat, providing the most tender result.

  • Poultry: 165°F (74°C) in the thickest part
