Tips for success
For the best texture, use refrigerated tortellini rather than frozen. They cook more evenly and stay firmer. If you prefer a thicker sauce, remove the lid during the last 30 minutes of cooking to let some moisture evaporate.
Conversely, if the sauce seems too thick, stir in a splash of warm milk or chicken broth until it reaches the desired consistency.
To get crispy pepperoni edges, you can crisp a few extra slices in a skillet and sprinkle them on top before serving. For a more indulgent dish, add a handful of grated Parmesan cheese when stirring at the end.
If you like a bit of heat, serve with red pepper flakes on the side. This recipe is versatile—feel free to add sautéed onions or bell peppers for extra flavor.
Variations
- Spicy Sausage Version: Use hot Italian sausage and add a pinch of red pepper flakes with the Alfredo sauce for a spicy kick. Top with sliced jalapeños before serving for extra heat.
- Vegetarian Option: Omit the pepperoni and sausage, and add an extra cup of mushrooms and a can of drained artichoke hearts. Use a vegetarian Alfredo sauce and check that the tortellini are vegetarian.
- Chicken and Broccoli: Add 1 pound of boneless, skinless chicken thighs, cut into chunks, with the meat layer. Stir in 2 cups of frozen broccoli florets during the last 30 minutes of cooking.
- Four Cheese Blend: Replace the mozzarella with a blend of shredded provolone, fontina, and Parmesan. Add 1/2 cup of grated Parmesan to the Alfredo sauce for extra depth.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of milk to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in the microwave in 30-second bursts, stirring between, or on the stovetop over medium-low heat with a splash of milk or broth until hot.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; add a splash of milk or broth when reheating to restore the creamy consistency. Reheat gently in the microwave or on the stovetop until heated through.
This dish can be assembled up to 24 hours in advance. Layer the ingredients in the slow cooker insert, cover, and refrigerate. When ready to cook, place the insert in the slow cooker and cook on low for 4 hours, adding about 30 minutes to the cooking time to account for the chilled ingredients.
Serving ideas
Serve this hearty pasta dish straight from the slow cooker for a casual family dinner. It pairs well with a simple green salad dressed with lemon vinaigrette to cut through the richness.
Crusty bread or garlic bread is perfect for sopping up the extra sauce. For a more formal presentation, plate a generous scoop on a white plate and garnish with fresh parsley or basil.
This dish is substantial enough to be a complete meal on its own, but you can also serve it as a side to grilled chicken or steak. It's a crowd-pleaser at potlucks and game-day gatherings.
Leftovers make a great lunch the next day, served cold or reheated. For a festive touch, sprinkle with extra mozzarella and broil briefly until bubbly.

Slow Cooker Pepperoni Tortellini Alfredo

Ingredients
- 4 oz thick-cut pepperoni slices
- 1 lb Italian sausage, casings removed
- 20 oz refrigerated spinach-and-cheese tortellini
- 8 oz cremini mushrooms, sliced
- 15 oz jarred Alfredo sauce
- 8 oz cream cheese, softened
- 2 cups shredded whole-milk mozzarella
Instructions
- Add the pepperoni slices and Italian sausage crumbles to the bottom of a 6-quart slow cooker. Use a spoon to break the sausage into smaller pieces so it cooks evenly.
- Scatter the spinach-and-cheese tortellini over the meat, followed by the sliced cremini mushrooms. Spread them out so they are evenly distributed.
- Pour the jarred Alfredo sauce evenly over the tortellini and mushrooms. Use a spoon to gently press the ingredients down so they are mostly submerged in the sauce.
- Place the block of cream cheese in the center of the slow cooker. Sprinkle the shredded mozzarella evenly over the top.
- Cover the slow cooker and cook on low for 4 hours, or on high for 2 hours, until the sausage is cooked through and the tortellini are tender.
- Once cooked, stir the mixture gently to combine the melted cream cheese and mozzarella into the sauce. Taste and adjust seasoning with salt and pepper if needed.
