Tips for success
For the most flavor, sear the brisket in a hot skillet before adding it to the slow cooker. This adds a deep, caramelized crust.
However, this step is optional and the recipe works beautifully without it. If you have time, searing is worth the extra effort.
The gravy thickens slightly as it cooks. If you prefer a thicker sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it in during the last 30 minutes of cooking.
For a thinner gravy, add a splash of beef broth or water. Adjust the consistency to your liking.
Variations
- Spicy Kick: Add 1/2 teaspoon of crushed red pepper flakes or a diced jalapeño with the pepperoncini for extra heat. You can also use hot pepperoncini or add a splash of the jarred pepper juice.
- Herb Boost: Stir in 2 teaspoons of dried oregano or Italian seasoning along with the ranch mix. Fresh thyme or rosemary sprigs can be added during cooking and removed before serving.
- Low-Carb Option: Serve the brisket over cauliflower rice, zucchini noodles, or alongside roasted vegetables instead of white rice. The dish is naturally low-carb without the rice.
- Creamier Gravy: For a richer, creamier gravy, stir in an additional 1/4 cup of sour cream and 1 tablespoon of butter during the last 30 minutes of cooking. This adds extra silkiness and flavor.

Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if needed to loosen the gravy.
This recipe is ideal for meal prep. Cook the brisket a day ahead, shred it, and store it with the gravy in the refrigerator.
The flavors deepen overnight. Reheat gently before serving. You can also freeze the shredded brisket in portions for up to 3 months.
Serving ideas
Serve the brisket over steamed white rice, buttery mashed potatoes, or egg noodles to absorb the delicious gravy. A side of crusty bread is perfect for dipping. Add a simple green salad or roasted vegetables to round out the meal.
Garnish with fresh parsley or chives, if desired, for a pop of color. The pepperoncini peppers are edible and add a tangy kick; some may prefer to remove them before serving. The dish is rich and satisfying on its own, so keep sides simple.

Slow-Cooker Pepperoncini Ranch Dijon Beef Brisket

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 1 oz dry ranch dressing mix
- 1 oz dry au jus gravy mix
- 10 whole pepperoncini peppers
- 1/2 cup sour cream
- 2 tbsp coarse whole-grain Dijon mustard
- 1/2 cup beef au jus
- Steamed white rice, for serving
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Sprinkle the dry ranch mix and dry au jus gravy mix evenly over the entire surface of the meat. Scatter the whole pepperoncini peppers on top, tucking a few around the sides.
- Dollop the sour cream over the top of the brisket, spreading it slightly. Add the whole-grain Dijon mustard in small spoonfuls. Pour the beef au jus along the side of the meat, being careful not to wash off the seasonings.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 5 to 6 hours, until the brisket is fork-tender and easily shreds. The meat should be cooked through to at least 145°F (63°C), but for brisket, longer cooking is needed for tenderness. Let the meat rest for at least 3 minutes before shredding.
- Using two forks, shred the brisket directly in the slow cooker, mixing it with the peppers and gravy. If the meat is too large to handle, transfer it to a cutting board, shred, then return to the pot. Stir to coat every piece in the creamy, tangy sauce.
- Spoon steamed white rice onto serving plates. Top with a generous portion of the shredded brisket and spoon extra gravy and peppers over the top. Serve hot.
