Before you start

Before starting, ensure that all chicken is properly handled and refrigerated until the moment it goes into the slow cooker.

Clean your workspace thoroughly, especially after handling raw poultry. Have your onions sliced into consistent half-moons to ensure they cook at the same rate.

Prepare your brown sugar and garlic powder in small bowls for easy access. Double-check that your slow cooker insert is clean and dry. Having all ingredients measured and ready before you begin will make the assembly process seamless and efficient.

Ingredients at a glance (5)
  • 4 lbs bone-in skin-on chicken thighs
  • 1 large yellow onion, sliced into half-moons
  • 1/2 cup brown sugar
  • 1 tbsp garlic powder
  • 12 oz dark brown pepper soda

Instructions

Layering the ingredients

  1. Prepare the slow cooker base
Place the bone-in skin-on chicken thighs into the slow cooker stoneware insert. Arrange the yellow onion slices evenly over the top of the chicken pieces to ensure they cook down into the sauce.
Look for Chicken should be arranged in a single layer or slightly overlapping.
Tip Ensure the slow cooker insert is clean before adding the meat.

The chicken thighs should be arranged neatly in the bottom of the insert, topped with an even layer of sliced onions. Ensure the onions cover the chicken completely to help them steam and soften during the cooking process.

Adding seasonings and liquid

  1. Season and pour
Sprinkle the brown sugar and garlic powder evenly over the onions and chicken. Pour the dark brown pepper soda over the entire mixture, ensuring it coats the ingredients well.
Look for The liquid should partially submerge the chicken thighs.
Tip Pour the soda slowly to avoid splashing the sides of the cooker.

The brown sugar and garlic powder should be distributed evenly over the top, and the pepper soda should be poured gently. The liquid should reach roughly halfway up the sides of the chicken to ensure everything cooks evenly.

Slow cooking to completion

  1. Slow cook and serve
Cover and cook on low for 4 to 6 hours. Ensure the chicken reaches an internal temperature of 165°F (74°C). Allow the chicken to rest for at least 5 minutes before serving with the sauce and onions.
Look for Chicken skin should be soft and meat should be opaque and pull away from the bone easily.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check for doneness using a meat thermometer inserted into the thickest part of the thigh.

The dish is complete when the chicken is fully cooked and tender. The kitchen should smell savory and slightly sweet. Ensure the sauce has a rich, deep color and the meat is falling off the bone.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven cooking and excess liquid that prevents the sauce from thickening properly. Another error is using chicken breasts instead of thighs; breasts will dry out significantly during the extended cook time.

Avoid using a high-heat setting, as this can cause the sugar in the soda to burn or the chicken to overcook before the flavors have fully melded. Lastly, do not skip the rest period, as it is crucial for the juices to redistribute.

How to tell it’s done

The chicken is ready when it is completely tender and the meat pulls away from the bone with minimal resistance. Use a meat thermometer to verify that the thickest part of the thigh reaches an internal temperature of 165°F (74°C).

The onions should be soft and translucent, and the sauce should have a slightly thickened consistency. If the chicken is not quite done, continue cooking in 30-minute increments, checking the temperature frequently to ensure the meat does not become mushy.

  • Poultry: 165°F (74°C) in the thickest part
