Tips for success
For the most tender skirt steak, slice it thinly against the grain before cooking. This shortens the muscle fibers, so they break down faster during the long cook time.
If you have time, let the cooked dish rest for 10 minutes after stirring — this allows the sauce to thicken slightly and the flavors to meld. For a thicker sauce, remove the lid for the last 30 minutes of cooking to let some moisture evaporate.
To make this dish ahead, prepare the layers the night before and store the covered slow cooker insert in the refrigerator. In the morning, place it in the slow cooker base and cook as directed.
Leftovers can be refrigerated for up to 4 days and taste even better the next day as the flavors continue to develop. Reheat gently on the stovetop or in the microwave, adding a splash of milk or broth if the sauce has thickened too much.
Variations
- Chicken Version: Substitute boneless, skinless chicken thighs for the skirt steak. Cook on low for 4 to 5 hours, until the chicken is tender and reaches 165°F (74°C). Shred the chicken and stir into the sauce.
- Extra Spicy: Add a diced jalapeño or a teaspoon of chipotle powder to the salsa layer. Use a hot salsa and extra pepper jack cheese for a spicier kick.
- Bean Swap: Replace pinto beans with black beans or a mix of both. If using dried beans, cook them separately before adding to the slow cooker.
- Low-Carb Option: Serve the meat and sauce over cauliflower rice or in lettuce cups instead of tortilla chips or rice. The dish itself is naturally low-carb.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of milk or broth to restore the creamy sauce.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a splash of milk or broth if the sauce is too thick.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; stir in a little milk or beef broth when reheating to restore a creamy consistency. Reheat gently on the stovetop over low heat or in the microwave in 30-second bursts, stirring between intervals.
Assemble the slow cooker insert the night before: layer the beef, seasoning, beans, salsa, and cheeses, then cover and refrigerate. In the morning, place the insert in the slow cooker base and cook on low for 6 to 8 hours. This makes the recipe even more convenient for busy days.
Serving ideas
Serve this slow cooker skirt steak over crispy tortilla chips for a loaded nacho-style dinner, or spoon it over warm rice for a hearty bowl. It also works beautifully as a filling for soft tacos or burritos.
For a complete meal, add a side of Mexican rice, refried beans, or a simple green salad. The creamy, spicy sauce is delicious with a squeeze of fresh lime and a sprinkle of cilantro, if desired.
This dish is rich and satisfying on its own, but it also pairs well with cool toppings like sour cream, diced avocado, or pickled jalapeños. For a lighter option, serve it in lettuce cups.
The leftovers are great for meal prep — portion them into containers with rice or chips for an easy lunch. The flavors are bold and comforting, making it a crowd-pleaser for any taco night.

Slow-Cooker Pepper Jack Taco Skirt Steak

Ingredients
- 2 lb beef skirt steak, sliced into strips
- 1 oz taco seasoning mix
- 15 oz canned pinto beans, drained and rinsed
- 1 cup chunky salsa
- 1 cup white queso blanco dip
- 1 cup shredded pepper jack cheese
Instructions
- Place the sliced skirt steak strips in the bottom of the slow cooker. Sprinkle the taco seasoning over the meat, then add the drained pinto beans and the chunky salsa. Spread the salsa and beans evenly over the meat.
- Pour the white queso blanco dip over the top of the mixture, then sprinkle the shredded pepper jack cheese evenly over the queso. Do not stir.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the beef is fork-tender and easily shreds. The internal temperature of the beef should reach at least 145°F (63°C) for food safety, but for tender results cook until it shreds easily. Let it rest for 3 minutes before slicing.
- Once the beef is tender, stir the mixture well to combine the cheese sauce with the meat and beans. Let it rest for 5 minutes before serving. Serve warm over tortilla chips or rice.
