Tips for success

For the best flavor, use high-quality skirt steak and slice it against the grain. This makes the meat more tender even before slow cooking.

If you have time, marinate the steak in a little lime juice and garlic for an hour before adding it to the slow cooker, but this is optional.

To thicken the sauce, mix a tablespoon of cornstarch with a little water and stir it in during the last 30 minutes of cooking.

Alternatively, leave the lid off to let excess moisture evaporate. For a spicier kick, add a chopped fresh jalapeño or a dash of hot sauce before serving.

Variations

  • Chicken Fiesta: Substitute boneless, skinless chicken thighs for the skirt steak. Cook on low for 4 to 5 hours until the chicken shreds easily. The rest of the ingredients stay the same.
  • Pork Carnitas Style: Use pork shoulder, cut into chunks, instead of skirt steak. Increase cooking time to 8 hours on low. Shred the pork and serve with extra pickled jalapeños.
  • Mild Version: Replace the pickled jalapeños with diced green bell peppers and use Monterey Jack instead of pepper jack. This keeps the creamy texture without the heat.
  • Black Bean Add-In: Stir in a drained can of black beans during the last 30 minutes of cooking for extra heartiness. The beans soak up the sauce and add protein.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if the sauce has thickened too much.

This dish is perfect for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook as directed. You can also cook the full recipe, cool, and refrigerate for up to 3 days before reheating.

Serving ideas

Serve this slow-cooker steak over warm tortilla chips for a loaded nacho-style meal, or spoon it over Mexican rice for a hearty bowl. It also works well as a filling for tacos or burritos. Top with fresh cilantro, diced onion, or a squeeze of lime to brighten the flavors.

For a complete spread, add sides like refried beans, guacamole, or a simple green salad. The creamy, spicy sauce pairs well with cool, crunchy toppings.

This dish is hearty enough to be a main course, but it also shines as a party dip — just keep it warm in the slow cooker and let guests serve themselves.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, the entire dish can be assembled in the slow cooker insert the night before, covered, and refrigerated. In the morning, place the insert in the slow cooker and cook as directed. Leftovers also keep well in the fridge for up to 4 days.
What can be used instead of skirt steak?
Flank steak, sirloin, or even chuck roast work well. The key is to choose a cut that benefits from slow cooking. Slice any of these against the grain for maximum tenderness.
Why does the sauce sometimes turn out watery?
Watery sauce can happen if the tomatoes release too much liquid or the lid is lifted frequently. To fix it, leave the lid off for the last 30 minutes to let it reduce, or stir in a cornstarch slurry to thicken.
Can this be made in an Instant Pot?
Yes, use the sauté function to warm the ingredients briefly, then pressure cook on high for 20 minutes with a natural release. The cooking time will be much shorter, but the flavors will still be delicious.
Is this dish very spicy?
The heat level is moderate, thanks to the pickled jalapeños and pepper jack. For a milder version, reduce the jalapeños and use Monterey Jack cheese. For extra heat, add fresh jalapeños or a splash of hot sauce.

Slow-Cooker Pepper Jack Skirt Steak Fiesta

Prep 10 minCook 6 hTotal 6 h 10 minServes 6
Slow-cooker skirt steak in creamy pepper jack sauce with tomatoes and jalapeños.

Ingredients

  • 2 lb beef skirt steak, sliced into strips
  • 1 can (10 oz) fire-roasted diced tomatoes with green chiles
  • 1/2 cup sliced pickled jalapeños
  • 1 cup queso blanco dip
  • 1 1/2 cups shredded pepper jack cheese

Instructions

  1. Place the sliced skirt steak strips in the bottom of a 6-quart slow cooker. Spread them into an even layer. Pour the fire-roasted diced tomatoes with green chiles over the meat, then scatter the sliced pickled jalapeños on top. Do not stir.
  2. Pour the queso blanco dip evenly over the tomato layer, then sprinkle the shredded pepper jack cheese on top. Spread gently with a spoon to cover as much surface as possible. Cover the slow cooker with the lid.
  3. Set the slow cooker to LOW and cook for 6 to 8 hours, or until the skirt steak is fork-tender and easily shreds. The sauce will be bubbling and the cheese fully melted. Do not lift the lid during the first 4 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
  4. Once the steak is tender, use two forks to shred the meat directly in the slow cooker. Stir the shredded meat into the sauce so every piece is coated. Let it sit uncovered for 5 minutes to thicken slightly. Let it rest for 3 minutes before slicing.
  5. Spoon the hot steak mixture onto plates with crispy tortilla chips and Mexican rice. Serve immediately while the sauce is warm and bubbly.
