Tips for success
To make this dish even more flavorful, consider toasting the spices before adding them. A quick bloom of chili powder and cumin in a dry skillet can deepen their flavor. If you have time, sear the chicken breasts in a hot skillet with a little oil before adding them to the slow cooker.
This adds a golden crust and rich, savory notes that complement the sauce. However, the recipe is designed to be dump-and-go, so this step is entirely optional. For a thicker sauce, mash some of the beans before stirring them in.
This recipe is incredibly versatile. Use the cooked chicken as a filling for tacos, burritos, or enchiladas. Top with fresh cilantro, diced onions, or a squeeze of lime for brightness. If you prefer a spicier kick, add a chopped jalapeño or a dash of hot sauce when serving. For a lower-carb option, serve over cauliflower rice or in lettuce cups. The leftovers are just as delicious, and the flavors continue to meld overnight in the refrigerator.
Variations
- Spicy Green Enchilada Version: Swap the red enchilada sauce for green enchilada sauce and use pepper jack as directed. Add a can of diced green chiles for extra heat. The flavor will be tangier and brighter, with a gentle kick from the green chiles.
- Chipotle Smoked Version: Add 1-2 chopped chipotle peppers in adobo sauce to the slow cooker along with the enchilada sauce. The smoky, spicy flavor will infuse the chicken and beans, giving the dish a deeper, more complex taste. Reduce the pepper jack to 1/2 cup if you want less heat.
- Black Bean and Corn Version: Replace the pinto beans with black beans and add 1 cup of frozen corn. The corn adds a pop of sweetness and texture. Use a mild red enchilada sauce to let the corn and beans shine. Serve with a sprinkle of fresh cilantro.
- Creamy Avocado Version: After shredding the chicken, stir in 1 diced avocado and a squeeze of lime juice just before serving. The avocado adds a creamy, fresh element that balances the spicy sauce. Serve with extra avocado slices on top for a beautiful presentation.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of broth or water to restore the sauce's creamy texture.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, or in the microwave in 30-second increments.
Store any leftover fiesta chicken in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; when reheating, add a splash of chicken broth or water to loosen it to your desired consistency.
Reheat gently on the stovetop or in the microwave, stirring occasionally to ensure even heating. The dish also freezes well for up to 3 months. Let it cool completely before transferring to a freezer-safe container. Thaw overnight in the refrigerator before reheating.
This dish is perfect for make-ahead meals. You can assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert into the slow cooker base and cook as directed.
If you do this, you may need to add 30 minutes to the cooking time because the ingredients start cold. Alternatively, you can cook the full recipe, let it cool, and store it in the refrigerator for up to 4 days. Reheat individual portions as needed for quick lunches or dinners throughout the week.
Serving ideas
Serve the fiesta chicken hot, straight from the slow cooker. It's wonderful over steamed white rice or Mexican rice, with the sauce soaking into the grains. For a more casual meal, set out a basket of warm tortillas or tortilla chips and let everyone build their own tacos or nachos.
A side of sour cream, guacamole, or pico de gallo adds a fresh, cool contrast to the spicy, creamy chicken. Garnish with chopped cilantro and a lime wedge for a bright finish.
This dish also works well as a filling for enchiladas, burritos, or quesadillas. Spoon the chicken into tortillas, top with extra cheese, and bake until bubbly for a delicious twist. For a lighter meal, serve it over a bed of shredded lettuce with a dollop of Greek yogurt. The versatility makes it a go-to for busy weeknights and entertaining alike. Leftovers are just as good the next day, so make a double batch if you have the space in your slow cooker.

Slow-Cooker Pepper Jack Red Enchilada Fiesta Chicken

Ingredients
- 3 lb boneless skinless chicken breasts
- 2 cups red enchilada sauce
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 cup queso blanco dip
- 1 cup shredded pepper jack cheese
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Pour the red enchilada sauce over the chicken, making sure the meat is mostly covered. Add the drained pinto beans and spread them around the chicken. Pour the queso blanco dip over the top, then sprinkle with the shredded pepper jack cheese.
- Cover the slow cooker with its lid. Cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is cooked through and tender enough to shred. Do not open the lid during cooking unless necessary, as this releases heat and extends the cooking time.
- Once the chicken is cooked through and reaches 165°F (74°C), transfer the chicken breasts to a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir it into the sauce and beans. Let it sit for 5 minutes so the chicken absorbs the sauce.
- Spoon the fiesta chicken onto plates or into bowls. Serve hot, with tortilla chips and Mexican rice on the side if desired. The sauce will be thick and creamy, coating the chicken and beans. Enjoy immediately.
