Tips for success
For the best flavor, use a high-quality habanero lime salsa that has a good balance of heat and acidity. If you can't find it, make your own by blending roasted habaneros, lime juice, onion, and garlic.
The mango should be ripe but not mushy—firmer fruit holds its shape better during the long cook. If you prefer a smoother sauce, you can puree the mango before adding it.
To make this dish even more hands-off, you can prep the mango and cilantro the night before and store them in the refrigerator. The chicken can also be trimmed and placed in the slow cooker insert, then refrigerated overnight.
In the morning, just add the remaining ingredients and turn on the slow cooker. This makes it perfect for busy mornings when you want dinner ready by evening.
Variations
- Milder Version: Use a mild salsa instead of habanero, and substitute Monterey Jack for the pepper jack. The mango still adds sweetness, but the heat is toned down for sensitive palates.
- Extra Veggies: Add a diced bell pepper and a small red onion along with the mango. They'll soften during cooking and add color and texture to the sauce.
- Pineapple Twist: Replace half the mango with diced pineapple for a tropical flavor. The pineapple adds a tangy note that pairs well with the habanero and cheese.
- Creamy Avocado Finish: After cooking, stir in diced avocado just before serving. The cool, creamy avocado balances the heat and adds a fresh, buttery texture.

Serving ideas
Serve this saucy chicken over steamed Mexican rice, with warm tortillas, or alongside crispy tortilla chips for scooping. The creamy, spicy sauce is also delicious spooned over baked potatoes or roasted vegetables. For a complete meal, add a simple side salad with lime vinaigrette to cut through the richness.
Garnish with extra chopped cilantro, a few slices of fresh mango, or a dollop of sour cream to balance the heat. If you like it spicier, offer hot sauce at the table.
This dish is hearty enough to be the main event, but it also works well as a filling for tacos or burrito bowls. Let everyone customize their plate with their favorite toppings.

Slow-Cooker Pepper Jack Mango Habanero Chicken Thighs

Ingredients
- 6 boneless skinless chicken thighs
- 2 cups diced ripe mango
- 1 cup habanero lime salsa
- 1/2 cup chopped fresh cilantro
- 1 cup queso blanco dip (warm)
- 1 1/2 cups shredded pepper jack cheese
Instructions
- Place the boneless skinless chicken thighs in an even layer in the bottom of a 6-quart slow cooker. They can overlap slightly, but try to keep them in a single layer so they cook evenly.
- Scatter the diced mango evenly over the chicken. Pour the habanero lime salsa over the top, spreading it with a spoon to cover as much of the chicken as possible. Sprinkle the chopped cilantro over everything.
- Pour the warm queso blanco dip over the top of the salsa and mango. Sprinkle the shredded pepper jack cheese evenly over the queso. Do not stir—the layers will meld as they cook.
- Cover the slow cooker with the lid. Cook on low for 4 to 5 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C). Do not lift the lid during the first 3 hours to keep the heat steady.
- After 4 hours, check the chicken with an instant-read thermometer inserted into the thickest piece. It should read 165°F (74°C). If not, cover and cook for 30 more minutes. Once done, turn off the slow cooker and let the chicken rest for 5 minutes before serving.
- Gently stir the sauce to combine the melted cheeses and mango into a cohesive sauce. Use two forks to shred the chicken thighs into bite-size pieces, or leave them whole if preferred. Stir the shredded chicken back into the sauce.
- Serve the chicken and sauce over Mexican rice or alongside crispy tortilla chips. Scoop a generous portion onto each plate and garnish with extra cilantro if desired.
