Before you start
Before you start, cut the skirt steak into strips about 2 inches long and 1 inch wide. Slice the bell peppers and onion into thin strips.
Measure the lime juice and have the queso and shredded cheese ready. No need to brown the meat — it will cook perfectly in the slow cooker. Set out your 6-quart slow cooker and you’re ready to layer.
Ingredients at a glance (6)
- 2 lb beef skirt steak, cut into strips
- 3 bell peppers (red, yellow, orange), sliced
- 1 large red onion, sliced
- 2 tbsp fresh lime juice
- 1 cup white queso blanco dip, warmed
- 1 cup shredded pepper jack cheese
Instructions
Layer and Set
- Layer the Steak and VegetablesPlace the skirt steak strips in the bottom of a 6-quart slow cooker. Scatter the sliced bell peppers and red onion over the meat. Drizzle with the fresh lime juice.Look for The steak is covered with colorful peppers and onion.Tip Cut the steak into even strips so they cook uniformly.
- Add the Cheese SaucesPour the warmed queso blanco dip over the meat and vegetables. Sprinkle the shredded pepper jack cheese evenly on top. Do not stir.Look for The top is covered with a layer of white and yellow cheese.Tip Warming the queso helps it melt more evenly during cooking.
At the end of this phase, your slow cooker contains a colorful layer of raw steak, peppers, onions, and lime juice, topped with a blanket of queso and shredded pepper jack.
The ingredients are not mixed — that’s intentional. The cheese will melt and spread as it cooks. Your kitchen smells fresh and citrusy, and the setup took less than 10 minutes.
Slow Cook
- Slow Cook Until TenderCover the slow cooker and cook on low for 6 to 8 hours, until the steak is fork-tender and easily shreds. The cheese sauce will be bubbling and the peppers soft. Let it rest for 3 minutes before slicing.Look for The sauce is bubbling and the meat is tender.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip Avoid lifting the lid during cooking to keep the heat steady.
After 6 to 8 hours on low, the slow cooker is bubbling gently. The cheese sauce is smooth and creamy, with a golden hue from the pepper jack. The steak is visibly tender, and the peppers have softened and released their sweetness. The aroma is rich, cheesy, and slightly spicy. You can see steam rising when you lift the lid.
Rest and Serve
- Rest and ServeTurn off the slow cooker. Let the steak rest for at least 3 minutes before serving. Serve the steak and peppers with the queso sauce over rice or with tortilla chips.Look for The sauce is thick and the steak is tender.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip The rest lets the juices redistribute for the most flavorful bites.
Once the slow cooker is off, the sauce settles into a thick, glossy coating. The steak strips are juicy and pull apart easily. The peppers and onions are soft but not mushy. Spoon the mixture over rice or scoop it up with tortilla chips. The cheese sauce clings to everything, and each bite is savory, creamy, and satisfying.
Common mistakes
The most common mistake is lifting the lid to check on the food. Every time you open the slow cooker, heat escapes and adds 20-30 minutes to the cooking time. Trust the process and keep the lid on.
Another mistake is using a lean cut like sirloin and overcooking it — it can dry out. Stick with skirt or flank steak. Also, don’t skip the resting time; it keeps the juices in the meat.
How to tell it’s done
The steak is done when it is fork-tender and easily pulls apart. Insert a fork into a thick strip — it should slide in with little resistance. The internal temperature should reach at least 145°F (63°C) for food safety, but it will likely be higher after 6-8 hours on low.
The peppers should be soft but still hold their shape, and the cheese sauce should be thick and bubbling. Let the meat rest for 3 minutes before serving.
- Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
