Tips for success
For the most flavorful carnitas, let the pork rest in the sauce for 10 minutes after shredding — it absorbs more liquid and becomes even juicier.
If you prefer a bit of char, spread the shredded pork on a baking sheet and broil for 3 to 5 minutes before serving, but this is optional.
To make the sauce thicker, remove the lid for the last 30 minutes of cooking and turn the heat to high. This helps evaporate excess liquid.
If the sauce is too thick, stir in a splash of chicken broth or water. Taste and adjust seasoning with salt and pepper before serving.
Variations
- Chicken Fajita Carnitas: Replace the pork shoulder with boneless, skinless chicken thighs (about 3 pounds). Cook on low for 6 to 7 hours, or until the chicken shreds easily. The cooking time is shorter than pork, so check for doneness at 6 hours.
- Spicy Chorizo Blend: Use 2 pounds of pork shoulder and 1 pound of fresh Mexican chorizo, removed from casings. Cook as directed, but break up the chorizo during the last hour. The chorizo adds a smoky, spicy depth to the sauce.
- Veggie-Packed Version: Add a sliced zucchini or a cup of corn kernels along with the peppers. These vegetables cook quickly, so add them during the last 30 minutes to keep them slightly crisp. The sauce will be a bit thinner; thicken with a cornstarch slurry if needed.
- Smoky Chipotle Twist: Stir 1 to 2 tablespoons of chopped chipotle peppers in adobo sauce into the queso blanco before adding. This adds a smoky, spicy kick. For a milder version, use just the adobo sauce without the peppers.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 4 days.
- Freezer
- Freeze the cooled carnitas in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling. Add a little broth or water if the sauce has thickened too much.
Store leftover carnitas in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently with a splash of broth or water to loosen it.
Assemble the slow cooker the night before: layer the pork, peppers, onions, lime juice, and cheeses in the insert, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding 30 minutes to the cooking time to account for the cold start.
Serving ideas
Serve the carnitas over crispy tortilla chips for a loaded nacho-style meal, or spoon them onto warm tortillas for tacos.
The Mexican rice is a perfect side, soaking up the extra cheese sauce. Garnish with fresh cilantro, diced avocado, or a squeeze of lime, if desired — though the video keeps it simple.
For a heartier plate, serve the carnitas over a bed of rice and beans, or use them to top a baked potato. The creamy, spicy sauce pairs well with cool toppings like sour cream or pickled onions. Leftovers can be used in quesadillas, burritos, or breakfast scrambles.

Slow-Cooker Pepper Jack Fajita Pork Carnitas

Ingredients
- 3 lb boneless pork shoulder, cut into 1 1/2-inch chunks
- 3 bell peppers (red, yellow, orange), sliced
- 1 large red onion, thinly sliced
- 1/4 cup fresh lime juice (from about 2 limes)
- 1 cup warm white queso blanco dip
- 1 1/2 cups shredded spicy pepper jack cheese
- Crispy tortilla chips, for serving
- Mexican rice, for serving
Instructions
- Place the pork shoulder chunks in the bottom of a 6-quart slow cooker. Scatter the sliced bell peppers and red onion over the pork. Pour the fresh lime juice evenly over the top.
- Spoon the warm queso blanco dip over the vegetables and pork. Sprinkle the shredded pepper jack cheese on top, covering as much surface as possible.
- Cover the slow cooker and cook on low for 8 hours, or on high for 4 to 5 hours, until the pork is fork-tender and easily shreds. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- Using two forks, shred the pork directly in the slow cooker, mixing it with the peppers, onions, and cheese sauce. If desired, let the meat rest for at least 3 minutes before shredding to keep it juicy.
- Spoon the bubbling carnitas and sauce over crispy tortilla chips and Mexican rice on a serving plate. Serve hot, with extra lime wedges if desired.
