Tips for success
For the best texture, use ziti or another short tube pasta that can hold up to slow cooking. Avoid delicate shapes like angel hair or spaghetti, which will turn mushy.
If you prefer a crispier cheese top, you can transfer the slow cooker insert to the oven under the broiler for a few minutes after cooking—just make sure the insert is oven-safe.
This recipe is incredibly versatile. Add a handful of baby spinach or sautéed mushrooms when you layer the ingredients for extra vegetables.
You can also swap the pork sausage for ground beef or turkey, or add a layer of ricotta for a creamier texture. The slow cooker does all the work, so feel free to customize to your taste.
Variations
- Spicy Sausage Ziti: Use hot Italian sausage and add a pinch of red pepper flakes with the herbs. The heat pairs well with the sweet marinara and creamy cheese.
- Vegetarian Ziti: Skip the sausage and add 2 cups of sautéed mushrooms, zucchini, or spinach. Use a vegetable-based marinara and proceed as directed.
- Creamy Baked Ziti: Stir 1 cup of whole-milk ricotta into the sauce before layering. The ricotta adds a creamy richness that complements the sausage and cheese.
- Chicken Parmesan Ziti: Substitute cooked, shredded chicken for the sausage. Add an extra 1/2 cup of marinara and a sprinkle of garlic powder for a chicken Parmesan twist.
Storage and make-ahead
- Fridge
- Store leftover baked ziti in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the baked ziti in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a 350°F (175°C) oven for 15–20 minutes, or in the microwave in 1-minute intervals, stirring occasionally, until heated through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The ziti will thicken as it sits; add a splash of water or broth when reheating to restore the saucy consistency. Let the dish cool for no more than 2 hours before refrigerating.
You can assemble the entire dish—without the cheese topping—up to 24 hours ahead. Keep it in the refrigerator, then add the cheese and cook as directed. You may need to add 30–60 minutes to the cooking time if starting from cold.
Serving ideas
Serve the baked ziti hot, straight from the slow cooker. It's a meal in itself, but a simple green salad with lemon vinaigrette and a slice of garlic bread make great accompaniments.
For a family-style dinner, place the slow cooker on the table and let everyone help themselves.
Garnish with fresh basil or parsley if you like, and pass extra grated Parmesan at the table.
The cheesy, bubbling ziti is satisfying on its own, but a sprinkle of red pepper flakes adds a pleasant kick for those who want it. Pair with a full-bodied red wine like Chianti or Sangiovese for a complete Italian meal.

Slow Cooker Parmesan Sausage Baked Ziti

Ingredients
- 1 lb sweet Italian pork sausage, browned and crumbled
- 1 lb ziti pasta
- 4 cups sweet basil marinara sauce
- 2 tsp Italian herb seasoning
- 2 cups shredded Italian four-cheese blend
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- In a large skillet over medium-high heat, cook the sweet Italian sausage, breaking it into crumbles with a wooden spoon. Cook until browned and cooked through, about 8–10 minutes. Drain any excess fat if desired.
- Place the browned sausage in the bottom of a 6-quart slow cooker. Spread it into an even layer.
- Add the ziti pasta over the sausage. Pour the marinara sauce over the pasta, then sprinkle with Italian herb seasoning. Stir gently to combine, making sure the pasta is mostly submerged in sauce.
- Sprinkle the shredded Italian four-cheese blend evenly over the pasta mixture, then finish with the freshly grated Parmigiano-Reggiano.
- Cover the slow cooker and cook on low for 4 hours, or on high for 2 hours, until the pasta is tender and the sauce is bubbling around the edges. Do not stir during cooking to allow the cheese to form a golden crust.
- Once the pasta is tender and the cheese is bubbly, spoon the baked ziti onto plates or a serving platter. Serve hot, making sure to get some of the cheesy crust in each portion.
