Tips for success
For the best results, use a 7-quart slow cooker to give the ingredients room to cook evenly. If your slow cooker is smaller, reduce the quantities slightly.
Also, choose a thick, high-quality Alfredo sauce – a watery sauce can make the dish too thin. If you prefer a richer flavor, use a combination of Alfredo and a splash of heavy cream.
To prevent the cheese from sticking to the sides, spray the insert with nonstick spray before adding the ingredients. Also, let the dish rest for 5 minutes after cooking before serving – this allows the sauce to thicken slightly and makes it easier to serve.
For a crispy top, you can broil the dish for 2-3 minutes after slow cooking, but make sure the slow cooker insert is broiler-safe.
Variations
- Spicy Kick: Add 1/2 teaspoon red pepper flakes or a diced jalapeño along with the sausage for a spicy version. You can also use hot Italian sausage instead of sweet for extra heat.
- Veggie-Packed: Stir in 2 cups of fresh spinach or kale in the last 30 minutes of cooking. Add 1 cup of diced bell peppers or zucchini with the mushrooms for more vegetables.
- Chicken Alfredo: Swap the Italian sausage for 1 lb of boneless, skinless chicken thighs, cut into bite-sized pieces. Increase cook time to 5 hours on LOW, and ensure chicken reaches 165°F (74°C).
- Gluten-Free Option: Use gluten-free tortellini or replace with gluten-free pasta (add in the last hour). Ensure the Alfredo sauce and pepperoni are gluten-free. Check all labels carefully.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld even more overnight. When reheating, add a splash of milk or chicken broth to loosen the sauce, as it thickens when chilled. Reheat in the microwave or on the stovetop until piping hot.
This recipe is perfect for meal prep. Assemble the layers in the slow cooker insert up to 24 hours in advance, cover, and refrigerate.
When ready to cook, add an extra 30 minutes to the cooking time to account for the cold start. You can also cook the full recipe and freeze individual portions for up to 3 months.
Serving ideas
Serve this tortellini as a hearty main course with a crisp green salad and garlic bread on the side. The creamy, cheesy pasta pairs beautifully with a light vinaigrette to cut through the richness. For a low-carb option, serve over steamed broccoli or zucchini noodles instead of pasta.
For a family-style dinner, bring the slow cooker to the table and let everyone serve themselves. Garnish with extra Parmesan, red pepper flakes, or fresh parsley for a pop of color.
This dish also makes great leftovers – the flavors deepen overnight, making it even more delicious the next day.

Slow-Cooker Parmesan Pepperoni Sausage Spinach Tortellini

Ingredients
- 4 oz thick-cut pepperoni, sliced
- 1 lb Italian sausage, casings removed
- 20 oz refrigerated spinach-and-cheese tortellini
- 8 oz cremini mushrooms, sliced
- 15 oz Alfredo sauce
- 2 cups shredded Italian four-cheese blend
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- Place the sliced pepperoni and the Italian sausage (casings removed) into the bottom of a 7-quart slow cooker. Spread them out evenly so they cover the base. No need to stir or brown the sausage first – it will cook perfectly in the slow cooker.
- Scatter the spinach-and-cheese tortellini over the meats. Add the sliced cremini mushrooms on top, spreading them evenly. These ingredients will sit on top of the meat and cook gently as the slow cooker works.
- Pour the Alfredo sauce evenly over the tortellini and mushrooms. Use a spoon to gently nudge the sauce into the nooks, but do not stir the ingredients together. The sauce will create a creamy base as it heats.
- Sprinkle the shredded Italian four-cheese blend evenly over the top of the sauce. Then add the freshly grated Parmigiano-Reggiano. The cheeses will melt into a golden, bubbly crust during cooking.
- Cover the slow cooker with the lid. Cook on LOW for 4 hours, or until the sausage is cooked through and the tortellini is tender. Do not stir during cooking to allow the cheese to form a golden crust on top.
- Check that the Italian sausage has reached a safe internal temperature of 160°F (71°C) using an instant-read thermometer inserted into the thickest part of a sausage chunk. If not, continue cooking for 30 minutes and check again.
- Once the sausage is fully cooked, gently stir the mixture to combine all the layers. Be careful not to break up the tortellini too much. The sauce should be creamy and the cheese should be well incorporated.
- Spoon the hot pasta onto serving plates or into bowls. Use a slotted spoon if you prefer less sauce, or a regular spoon for extra creaminess. Serve immediately, while the cheese is still stretchy and the dish is bubbling.
