Tips for success
For the best flavor, sear the pork chops in a hot skillet with a little oil before adding them to the slow cooker. This adds a deep, caramelized crust that enhances the overall dish. However, the recipe as written is still delicious without this step—it's a truly dump-and-go meal.
If the sauce is too thin at the end, remove the lid and set the slow cooker to high for 15–20 minutes to reduce it.
Conversely, if the sauce is too thick, stir in a splash of broth or water. Taste before serving and adjust seasoning with salt and pepper. Leftover sauce is excellent over mashed potatoes.
Variations
- Mushroom & Swiss: Add 8 oz sliced cremini mushrooms with the onions. Substitute Swiss cheese for the Parmesan, and use chicken broth instead of beef. Cook as directed. The mushrooms add an earthy flavor that pairs well with the Swiss.
- Garlic Herb: Stir 4 minced garlic cloves into the broth before pouring. Add 1 teaspoon dried rosemary along with the thyme. The garlic infuses the sauce with a savory depth, while rosemary complements the pork beautifully.
- Spicy Kick: Add 1/2 teaspoon red pepper flakes and 2 tablespoons hot sauce to the broth. Use pepper Jack cheese instead of Parmesan. The heat balances the creamy sauce, giving the dish a gentle warmth.
- Apple Cider: Replace the beef broth with apple cider and add 1 tablespoon Dijon mustard. The sweetness of the cider complements the pork, and the mustard adds a tangy note. Serve with extra cider sauce spooned over.

Serving ideas
Serve the pork chops with the sauce spooned generously over the top. The dish pairs beautifully with fluffy white rice, which soaks up the sauce. Mashed potatoes or buttered egg noodles are also excellent choices. For a low-carb option, serve over cauliflower rice or with roasted vegetables.
A side of crusty bread is perfect for dipping into the extra sauce. A simple green salad with a light vinaigrette balances the richness.
For a complete French onion experience, top the chops with a slice of toasted baguette and melted Gruyère cheese before serving. This dish is hearty enough to be a meal on its own.

Slow-Cooker Parmesan French Onion Ribeye Pork Chops

Ingredients
- 4 bone-in ribeye pork chops (about 2 lb total)
- 2 large sweet Vidalia onions, thinly sliced
- 1 cup beef broth
- 6 sprigs fresh thyme
- 8 oz cream cheese, softened
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Place the bone-in ribeye pork chops in the bottom of a 6-quart slow cooker in a single layer. Scatter the sliced Vidalia onions over the chops, then add the fresh thyme sprigs. Pour the beef broth around the edges, being careful not to rinse the seasonings off the meat.
- Place the block of softened cream cheese in the center of the slow cooker, on top of the onions and chops. Sprinkle the grated Parmesan evenly over everything. Do not stir; the cream cheese will melt and create a sauce as it cooks.
- Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 4 to 5 hours, until the pork is fork-tender and reaches an internal temperature of 145°F (63°C). The sauce will be bubbling and the onions soft. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Remove the pork chops to a platter and let them rest for at least 3 minutes before serving. This allows the juices to redistribute, keeping the meat moist.
- Stir the sauce in the slow cooker until the cream cheese is fully melted and the sauce is smooth and velvety. Discard the thyme sprigs. Season with salt and pepper to taste.
- Spoon the sauce and onions over the pork chops. Serve hot, over rice, mashed potatoes, or with crusty bread to soak up every drop.
