Tips for success
For the most flavorful sauce, use a good-quality unfiltered apple cider. The natural sediment adds depth. If you prefer a thicker sauce, you can remove the pork and apples after cooking, then simmer the sauce on the stovetop for a few minutes to reduce.
Alternatively, mix a tablespoon of cornstarch with water and stir it into the sauce during the last 30 minutes of cooking.
This recipe is very forgiving—you can adjust the amount of brown sugar to suit your taste, or add a pinch of cinnamon or nutmeg for extra warmth.
For a savory twist, add a sprig of fresh thyme or rosemary during cooking. The sauce is excellent over mashed potatoes, rice, or egg noodles.
Variations
- Add Herbs: Stir in 2 sprigs of fresh thyme or 1 teaspoon dried rosemary with the other ingredients for an earthy, aromatic note. The herbs infuse the sauce and complement the pork and apples beautifully.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a minced fresh jalapeño for a subtle heat that balances the sweetness. This works especially well if you like a sweet-and-spicy flavor profile.
- Use Chicken: Substitute boneless, skinless chicken thighs for the pork chops. Cook on LOW for 4-5 hours until the chicken is tender and reaches 165°F (74°C). The sauce works equally well with chicken.
- Cider-Braised Onions: Add one thinly sliced yellow onion to the slow cooker along with the apples. The onions will soften and sweeten as they cook, adding another layer of flavor to the sauce.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of cider or broth to thin the sauce if needed.
- Freezer
- Freeze the cooked pork chops and sauce in a freezer-safe container for up to 3 months.
- Reheat
- Reheat leftovers in a covered skillet over medium-low heat, adding a splash of cider or broth to keep the sauce creamy.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The sauce may thicken as it cools; add a splash of cider or broth when reheating to loosen it.
Reheat gently in the microwave or on the stovetop until piping hot. For best texture, consume within a few days.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
You may need to add 30 minutes to the cooking time if starting from cold. Alternatively, cook the recipe fully, then cool and refrigerate; reheat gently before serving.
Serving ideas
Serve the pork chops with a generous spoonful of the creamy apple cider sauce over the top. The dish pairs beautifully with fluffy white rice, mashed potatoes, or buttered egg noodles to soak up the sauce. A side of steamed green beans or a crisp green salad adds freshness.
For a complete autumn-inspired meal, serve with roasted root vegetables or a wild rice pilaf. Garnish with a sprinkle of fresh thyme or chopped parsley for a pop of color. This hearty, comforting dish is sure to become a family favorite.

Slow Cooker Parmesan Apple Cider Pork Chops

Ingredients
- 4 bone-in ribeye pork chops (about 1 inch thick)
- 2 Honeycrisp apples, sliced
- 1/4 cup dark brown sugar, packed
- 1/2 cup unfiltered apple cider
- 8 oz cream cheese, softened and cut into cubes
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Place the bone-in ribeye pork chops in the bottom of a 6-quart slow cooker, arranging them in a single layer if possible. Scatter the sliced Honeycrisp apples over the top of the chops. Sprinkle the dark brown sugar evenly over the apples, then pour the unfiltered apple cider over everything.
- Place the cubed cream cheese in the center of the slow cooker, directly on top of the apples and pork. Sprinkle the freshly grated Parmesan cheese over the entire surface, covering as much as possible.
- Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the pork chops are fork-tender and easily pull apart. The internal temperature of the thickest part of the chops should reach at least 145°F (63°C). Once done, let the chops rest for at least 3 minutes before serving.
- Using a slotted spoon or tongs, transfer the pork chops and apple slices to a serving platter or individual plates. Spoon the creamy Parmesan apple cider sauce from the slow cooker over the top. Serve immediately, with any extra sauce on the side.
