Before you start

Before starting, ensure your slow cooker insert is clean and dry. Prepare the turkey breast by patting it dry with paper towels to remove excess surface moisture, which helps the seasonings adhere better.

If you are using large carrots, peel and chop them into uniform pieces to ensure they cook evenly. Have all your ingredients measured and ready, including the broth and the onion soup mix, to allow for a quick assembly process.

Ingredients at a glance (4)
  • 2 lb boneless skinless turkey breast, sliced into thick pieces
  • 1 lb whole baby carrots
  • 1 packet dry onion soup mix
  • 1 cup chicken broth

Instructions

Layering the ingredients

  1. Assemble the slow cooker
Arrange the thick slices of boneless skinless turkey breast in the base of the slow cooker, fanning them out to ensure even cooking. Tuck the whole baby carrots into the gaps between and around the turkey slices.
Look for The turkey should be laid out in a single layer or slightly overlapping to ensure consistent heat distribution.
Tip Ensure the turkey slices are of similar thickness so they reach the safe internal temperature at the same time.

At this stage, the turkey and carrots should be neatly arranged in the slow cooker insert. The ingredients are raw and cold, so the focus is purely on proper placement. Ensure the turkey is evenly distributed across the bottom to maximize contact with the heat source and to allow the liquid to circulate effectively around every piece.

Adding the seasoning and liquid

  1. Season and add liquid
Sprinkle the dry onion soup mix evenly over the turkey and carrots. Pour the chicken broth over the top of the ingredients, taking care to distribute it so it hits the bottom of the slow cooker.
Look for The broth will pool at the bottom, helping to create a flavorful braising liquid as the slow cooker heats up.
Tip Do not stir the ingredients after adding the soup mix; the layers will naturally integrate during the slow cooking process.

Once you have sprinkled the onion soup mix and poured in the chicken broth, the ingredients are ready for the slow cooking process. The broth should partially submerge the turkey and carrots. Check that the onion soup mix is somewhat evenly distributed over the surface, as this will form the base of your savory gravy as it cooks.

Slow cooking to perfection

  1. Cook and serve
Cover and cook on low for 4 to 6 hours or on high for 3 hours. Use a meat thermometer to check that the turkey reaches an internal temperature of 165°F (74°C). Allow the meat to rest for 5 minutes before serving.
Look for The turkey is ready when it is opaque throughout, tender to the touch, and the carrots are soft when pierced with a fork.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Check the temperature at the thickest part of the largest turkey slice to ensure it is fully cooked through.

When the cooking time is complete, the kitchen should smell savory and aromatic. The turkey will be opaque and tender, and the carrots will have softened.

Before serving, check the internal temperature of the turkey with a thermometer. The liquid at the bottom will have transformed into a flavorful, slightly thickened onion gravy ready for serving.

Common mistakes

A common mistake is overcrowding the slow cooker or using pieces of turkey that vary too much in thickness, which leads to uneven cooking. Avoid the temptation to lift the lid frequently during the cooking process, as this releases heat and steam, significantly increasing the total time required.

Additionally, ensure you do not use too much broth; the turkey will release its own juices, and too much liquid will result in a thin, watery sauce rather than a rich gravy.

How to tell it’s done

The turkey is done when it is tender, easy to slice, and reaches a safe internal temperature of 165°F (74°C). The carrots should be fork-tender but still hold their shape.

Because slow cookers vary in heat intensity, use a meat thermometer inserted into the thickest part of the turkey to verify the temperature. If the meat is not yet at 165°F (74°C), continue cooking and check again in fifteen minutes.

  • Poultry: 165°F (74°C) in the thickest part
