Tips for success
For the best flavor, use a good-quality beef broth or gravy as the base. If you have leftover pan juices from a previous roast, those work wonderfully. You can also add a splash of Worcestershire sauce or a few sprigs of fresh thyme for extra depth, though the video keeps it simple.
If you prefer a thicker gravy, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the sauce during the last 30 minutes of cooking.
The mushrooms can be left whole if they are small, but halving them allows them to absorb more flavor. If you want a more pronounced mushroom presence, double the amount.
To serve, consider toasting the brioche buns lightly for a crunchy contrast to the tender beef. The leftover gravy is perfect for dipping sandwiches or spooning over mashed potatoes.
Variations
- Add Root Vegetables: Scatter peeled and chunked carrots, potatoes, or parsnips around the roast before cooking. They will absorb the savory gravy and become tender along with the beef. Add them in the first step so they cook for the full time.
- Make It Spicy: Stir in a teaspoon of smoked paprika or a pinch of red pepper flakes along with the onion soup mix for a subtle kick. You can also add a minced chipotle pepper in adobo for a smoky heat that complements the beef.
- Herb-Infused Gravy: Add a few sprigs of fresh thyme, rosemary, or sage to the slow cooker with the gravy. Remove the herb stems before shredding the meat. This adds a fragrant, earthy note that pairs beautifully with the mushrooms.
- Use Chicken or Pork: Swap the beef for a pork shoulder or a whole chicken. Adjust the cooking time accordingly—pork will take about the same time, while chicken will be done in 4–6 hours on LOW. The onion and mushroom gravy works with either protein.

Leftover pot roast can be stored in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Reheat gently in a saucepan over low heat, adding a splash of beef broth or water if the gravy has thickened too much. The meat can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
This recipe is ideal for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate overnight.
In the morning, simply place the insert in the slow cooker base and turn it on. Alternatively, you can cook the roast a day ahead, shred it, and store it in the refrigerator. Reheat gently before serving.
Serving ideas
Serve the shredded pot roast piled high on toasted brioche slider buns for a hearty sandwich, or spoon it over mashed potatoes, egg noodles, or creamy polenta. The rich gravy is perfect for soaking into any starch. A simple green salad or steamed vegetables on the side adds freshness and balances the richness of the dish.
For a casual dinner, set out the slow cooker with a slotted spoon and let everyone help themselves. The leftovers make excellent sandwiches the next day, stuffed into a crusty roll with a little extra gravy for dipping. You can also use the beef to top a baked potato or mix into pasta for a quick and satisfying meal.

Slow-Cooker Onion Mushroom Pot Roast

Ingredients
- 3 1/2 lb beef bottom round roast
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 2 cups brown gravy (canned or homemade)
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the beef bottom round roast in the center of the slow cooker insert. Sprinkle the dry onion soup mix evenly over the top of the roast. Scatter the halved cremini mushrooms around the sides of the roast, nestling them into the bottom of the cooker.
- Pour the brown gravy over the roast and mushrooms, making sure the liquid comes partway up the sides but does not completely submerge the roast. Dot the top of the roast with the pats of unsalted butter.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender and easily shreds. The internal temperature of the roast should reach at least 145°F (63°C) for medium-rare, but for pot roast it is typically cooked well beyond that until tender. Let the roast rest for at least 3 minutes before serving.
- Using two forks, shred the roast directly in the slow cooker, mixing it with the mushrooms and gravy. Stir gently to coat everything with the sauce. Serve the shredded beef and mushrooms over toasted brioche slider buns or on its own with the gravy spooned over the top.
