Tips for success
For the best texture, use a slow cooker with a ceramic insert, as it distributes heat more evenly than metal. If you're short on time, cook on HIGH for 4 to 5 hours, but the beef will be slightly less tender than with the low-and-slow method.
To make this dish even more convenient, combine all the ingredients in a freezer-safe bag (except the cheese) and freeze for up to 3 months. When ready to cook, thaw overnight in the refrigerator and then cook as directed, adding the cheese on top. The cheese can also be added during the last 30 minutes of cooking if you prefer a less browned top.
For a smoky twist, add a chipotle pepper in adobo sauce to the slow cooker along with the salsa. For a brighter flavor, stir in a squeeze of fresh lime juice and a handful of chopped cilantro just before serving. If you prefer a spicier dish, use hot salsa or add a diced jalapeño.
To make it a complete meal, serve the barbacoa over Spanish rice or with warm corn tortillas and a side of sour cream. The leftovers are excellent in burritos, quesadillas, or as a topping for nachos. You can also use the barbacoa as a filling for stuffed peppers or as a hearty topping for baked potatoes.
Variations
- Spicy Chipotle: Add 1 to 2 chipotle peppers in adobo sauce, minced, along with the salsa. The smoky heat pairs beautifully with the cheese and beef. Increase the amount for a fiery kick.
- Chicken Version: Substitute 2 1/2 pounds of boneless, skinless chicken thighs for the beef. Cook on LOW for 6 to 7 hours, or until the chicken shreds easily. The taco seasoning and salsa work just as well with chicken.
- Bean and Veggie: Omit the beef and double the pinto beans, adding 2 cups of diced zucchini or bell peppers. Increase the salsa to 2 cups and cook on LOW for 4 to 5 hours. The cheese will still create a delicious crust.
- Green Salsa: Use salsa verde instead of red salsa for a tangy, tomatillo-based flavor. The green salsa pairs wonderfully with the cheese and beef, giving the dish a slightly different but equally delicious profile.

Store leftover barbacoa in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen as it sits, making the leftovers even more delicious. Reheat gently in the microwave or on the stovetop, adding a splash of water or broth if the mixture has thickened too much. The dish can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating. When reheating frozen barbacoa, let it simmer gently on the stovetop until heated through, stirring occasionally to ensure even heating.
This recipe is ideal for meal prep. Prepare the ingredient layers in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker base and cook as directed. The beef can also be cooked up to 3 days in advance and stored in the refrigerator; reheat gently before serving.
For freezing, assemble the raw ingredients (except the cheese) in a freezer-safe container or bag, label with the date, and freeze for up to 3 months. Thaw overnight in the refrigerator, then cook as directed, adding the cheese on top. The cooked barbacoa also freezes well; portion it into airtight containers and freeze for up to 3 months.
Serving ideas
Serve the barbacoa hot, straight from the slow cooker, with a generous spoonful of the cheese-laden sauce. It's delicious over Spanish rice, which soaks up the rich gravy, or tucked into warm corn tortillas with a sprinkle of fresh cilantro and a squeeze of lime.
For a heartier meal, pile it onto tostadas with refried beans, lettuce, and crema. The dish also works beautifully as a filling for burrito bowls, nachos, or stuffed peppers. Because the flavors are bold and complete, it needs very little accompaniment—just a simple side of tortilla chips and a cold drink.
For a casual gathering, set out the slow cooker with warm tortillas, shredded lettuce, diced tomatoes, and sour cream, and let guests build their own tacos. The barbacoa is also fantastic as a topping for baked potatoes or as a filling for quesadillas. If you have leftovers, use them to make a hearty breakfast hash with eggs, or mix them into mac and cheese for a decadent twist. The possibilities are endless, and the flavor is always a crowd-pleaser. Whether served on a busy weeknight or at a festive get-together, this dish is sure to become a favorite.

Slow-Cooker Oaxaca Queso Taco Pinto Beef Barbacoa

Ingredients
- 2 1/2 lb beef chuck cubes
- 1 oz taco seasoning mix
- 15 oz canned pinto beans, drained and rinsed
- 1 1/2 cups chunky salsa
- 8 oz shredded Oaxaca cheese
- 8 oz shredded Mexican four-cheese blend
Instructions
- Place the beef chuck cubes in the bottom of a 6-quart slow cooker in an even layer. Sprinkle the taco seasoning mix over the beef, then spoon the drained pinto beans and chunky salsa on top. Spread everything into an even layer, making sure the seasoning coats the beef as much as possible.
- Scatter the shredded Oaxaca cheese and the shredded Mexican four-cheese blend evenly over the top of the beef mixture. Do not stir; let the cheese form a protective layer as it melts during cooking.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender and easily shreds. The cheese will melt and form a blistered, golden blanket on top. Let it rest for 3 minutes before slicing.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the beans, salsa, and melted cheese. Let the mixture sit, uncovered, for 5 minutes so the sauce thickens slightly.
- Spoon the barbacoa over warm Spanish rice, into taco shells, or onto tortillas. Serve hot, with extra salsa, cilantro, or lime wedges if desired.
