Tips for success
For the best texture, shred the pork while it's still warm. Use two forks to pull it apart, then stir it back into the sauce so it soaks up all the juices.
If you prefer crispy edges, spread the shredded pork on a baking sheet and broil for 5–7 minutes until browned and crisp. This adds a nice contrast to the creamy cheese. You can also thicken the sauce by simmering it on the stovetop after removing the pork, if it seems too thin.
When serving, let the carnitas rest for a few minutes so the sauce settles. This makes it easier to spoon onto plates without everything sliding off. Offer a variety of toppings like sliced radishes, chopped cilantro, diced onion, or a squeeze of lime to brighten the flavors.
The dish is hearty enough to stand alone, but it also works beautifully as a filling for tacos, burritos, or nachos. The leftovers are even better the next day, as the flavors continue to meld.
Variations
- Chicken Version: Swap the pork shoulder for boneless, skinless chicken thighs. Cook on low for 6–7 hours, until the chicken is tender and shreds easily. The cooking time is shorter, so check for doneness at 6 hours.
- Extra Spicy: Add 1–2 chipotle peppers in adobo sauce, minced, along with the tomatoes. The smoky heat will complement the pickled jalapeños and cheese, giving the dish a serious kick.
- Beef Carnitas: Use beef chuck roast instead of pork. Cook on low for 8–10 hours, until the beef is fork-tender. The beef will have a richer flavor that pairs well with the cheese and tomatoes.
- Vegetarian Option: Replace the pork with 3 cups of cooked pinto beans or jackfruit. Reduce the cooking time to 4–5 hours on low, just to heat through and meld the flavors. The cheese adds richness, while the beans provide protein.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze cooled carnitas in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 1–2 minutes, stirring halfway.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The carnitas will solidify as the fat and cheese set, so reheat gently with a splash of water or broth to restore the saucy texture. The pork can also be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.
This recipe is perfect for making ahead. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed. You can also cook the full recipe, shred the pork, and store it in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
Serving ideas
Serve the carnitas over steamed Spanish rice for a complete meal, or spoon into warm corn or flour tortillas for tacos. The cheesy, saucy pork also makes an excellent topping for nachos, tostadas, or a loaded baked potato.
Garnish with fresh cilantro, pickled red onions, or a dollop of sour cream to add a cool, tangy contrast. A side of black beans or a simple green salad rounds out the meal nicely.
For a lighter serving, skip the rice and instead serve the carnitas in lettuce cups with crunchy cabbage slaw. The bright, acidic flavors of the tomatoes and jalapeños pair well with creamy avocado slices.
This dish is also great for meal prep—divide it into individual containers with rice and vegetables for easy lunches throughout the week. However you serve it, the goal is to let the rich, cheesy pork shine.

Slow-Cooker Oaxaca Queso Pork Carnitas: Dump-and-Go Fiesta Dinner

Ingredients
- 3 lb pork shoulder, cut into 2-inch chunks
- 1 can (14.5 oz) fire-roasted diced tomatoes with green chiles
- 1/2 cup sliced pickled jalapeños, plus 2 tbsp brine
- 8 oz Oaxaca cheese, shredded
- 8 oz Mexican four-cheese blend, shredded
Instructions
- Place the pork shoulder chunks in the slow cooker insert, spreading them into an even layer. Pour the fire-roasted diced tomatoes with green chiles over the pork, then scatter the sliced pickled jalapeños and the pickling brine evenly over the top. Do not stir; the layers will meld as they cook.
- Shower the shredded Oaxaca cheese and Mexican four-cheese blend over the top of the pork and tomato mixture, covering the surface completely. Press the cheese down lightly with a spoon so it sits snugly over the ingredients.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the pork is fork-tender and easily shreds. The cheese will melt into a blistered, golden blanket as the pork braises in its own juices and the tomatoes. Let it rest for 3 minutes before slicing.
- When the pork is fork-tender, use two forks to pull it into large shreds right in the slow cooker. Stir the shredded pork into the cheesy tomato sauce until well combined, allowing the meat to soak up the juices. Let it rest for at least 3 minutes before serving.
- Spoon the carnitas over steamed Spanish rice or into warm tortillas. Top with extra pickled jalapeños, fresh cilantro, or a squeeze of lime if desired (not shown in the video but welcome). Serve hot, straight from the slow cooker.
