Tips for success

For the best flavor, sear the skirt steak in a hot skillet with a little oil before adding it to the slow cooker.

This adds a deep, caramelized crust that enhances the overall taste. If you're short on time, skip this step—the slow cooker will still produce a delicious meal.

Use a good-quality fajita seasoning or make your own with chili powder, cumin, garlic powder, and smoked paprika. Adjust the amount to your heat preference.

The lime juice at the end adds brightness; consider squeezing a little fresh lime over each serving for an extra pop of flavor.

Variations

  • Chicken Version: Substitute 2 pounds of boneless, skinless chicken thighs for the skirt steak. Cook on low for 4-5 hours or until the chicken shreds easily. Use the same seasoning and cheese blend for a delicious chicken fajita bowl.
  • Spicy Kick: Add 1-2 diced jalapeños or a teaspoon of chipotle powder to the slow cooker along with the vegetables. For extra heat, use pepper jack cheese in place of part of the Mexican blend.
  • Taco Topping: Instead of serving over rice, spoon the steak mixture into warm corn tortillas. Top with fresh cilantro, diced onions, and a squeeze of lime for a taco night twist.
  • Vegetarian Option: Replace the steak with 2 cups of sliced portobello mushrooms and 1 can of black beans, drained. Cook on low for 3-4 hours. The cheese and seasoning will create a hearty, meatless filling.

Serving ideas

Serve the Oaxaca queso fajita skirt steak over steamed Spanish rice for a hearty meal. Warm corn or flour tortillas are also excellent for making soft tacos.

Top with fresh cilantro, diced avocado, or a dollop of sour cream if desired—though the dish is delicious on its own.

For a low-carb option, serve the steak and peppers over lettuce wraps or cauliflower rice. The cheesy sauce pairs beautifully with grilled vegetables or a simple side salad. This versatile dish fits many dietary preferences and is sure to become a weeknight favorite.

Frequently asked questions

Can this recipe be made in a pressure cooker?
Yes, you can make this in an Instant Pot or other pressure cooker. Sear the steak on sauté mode, then add the vegetables, seasonings, and broth. Cook on high pressure for 20 minutes, then quick release. Stir in the cheese until melted and serve.
What is a good substitute for Oaxaca cheese?
Oaxaca cheese is a mild, stringy cheese that melts beautifully. Good substitutes include mozzarella, Monterey Jack, or a combination of mozzarella and mild cheddar. Look for a cheese that melts well and has a mild, creamy flavor.
Can this dish be made ahead and frozen?
Absolutely. Cook the dish completely, let it cool, and store in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave. The flavor actually improves after freezing.
How can you keep the cheese from becoming grainy?
Use freshly shredded cheese rather than pre-shredded, which often contains anti-caking agents that can cause a grainy texture. Also, avoid cooking on high heat for too long; low and slow is best for a smooth, creamy melt.
What should you serve with this dish?
This dish is delicious over Spanish rice, in warm tortillas, or alongside a simple green salad. Refried beans, grilled corn, or a side of guacamole also complement the flavors well. The goal is to balance the rich, cheesy steak with something fresh and bright.

Slow cooker filled with cheesy fajita steak and peppers, steam rising.

Ingredients

  • 2 lb skirt steak, sliced into strips
  • 3 bell peppers (red, yellow, orange), sliced
  • 1 large red onion, sliced
  • 2 tbsp fresh lime juice
  • 1 cup shredded Oaxaca cheese
  • 1 cup shredded Mexican four-cheese blend
  • 2 tbsp fajita seasoning
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup beef broth
  • cooked Spanish rice, for serving

Instructions

  1. Place the sliced skirt steak in the bottom of the slow cooker. Sprinkle with fajita seasoning, salt, and pepper. Add the sliced bell peppers and red onion on top. Pour the lime juice and beef broth over everything.
  2. Sprinkle the shredded Oaxaca cheese and Mexican four-cheese blend evenly over the top of the meat and vegetables.
  3. Cover the slow cooker and cook on low for 4 hours, or on high for 2-3 hours, until the steak is tender and the internal temperature reaches at least 145°F (63°C). The cheese will be melted and bubbly. Let it rest for 3 minutes before slicing.
  4. Once the steak is cooked through, turn off the slow cooker and let the meat rest for at least 3 minutes before serving. This allows the juices to redistribute.
  5. Spoon the hot steak, peppers, onions, and melted cheese over a bed of cooked Spanish rice. Serve immediately.
