Tips for success
For the best texture, use boneless, skinless chicken thighs — they stay moist and tender even after long cooking. If you prefer chicken breasts, reduce the cooking time to 3 to 4 hours on low to avoid dryness.
Always check the internal temperature with a thermometer; it should read 165°F (74°C). If you want a little extra smoky flavor, add a teaspoon of smoked paprika or a chipotle pepper to the salsa before pouring.
To make the cheese blanket extra blistered, you can switch the slow cooker to high for the last 30 minutes, but watch it carefully so it doesn't burn. If you like a spicier dish, use a hot salsa or add a minced jalapeño.
For a thicker sauce, remove the lid for the last 30 minutes of cooking to let some liquid evaporate. The dish is forgiving — adjust the heat and spice to your liking.
Variations
- Spicy Chorizo Version: Brown 1/2 pound fresh chorizo in a skillet and drain. Layer it with the chicken, or substitute it for half the chicken thighs. The chorizo adds a smoky, spicy depth that pairs beautifully with the salsa and cheese.
- Green Salsa Swap: Use a tomatillo-based green salsa instead of red for a brighter, tangier flavor. The green salsa pairs well with the cheese and adds a fresh, herbal note. Adjust the heat level by choosing a mild or hot version.
- Vegetarian Option: Omit the chicken and double the black beans and corn. Add a can of drained and rinsed pinto beans for extra heartiness. Cook on low for 4 to 5 hours, until the beans are hot and the flavors meld. The cheese blanket is the star.
- Creamy Chipotle Twist: Stir 1/2 cup of sour cream or crema into the salsa before pouring it over the chicken. This adds a cool, creamy element that balances the smoky spice. Use a chipotle salsa for an extra smoky kick.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water or broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 1-minute intervals, stirring between, or on the stovetop over medium-low heat until warmed through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious.
Reheat gently in the microwave or on the stovetop, adding a splash of water or broth if the sauce has thickened too much. The cheese may lose its gooeyness upon reheating, but the dish will still be satisfying.
This recipe is perfect for meal prep. Assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert into the slow cooker base and cook on low as directed.
If your slow cooker insert is not safe for the refrigerator, transfer the mixture to a covered container and then back to the insert in the morning. Add 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve the chicken and beans hot over a bed of steamed Spanish red rice. The rice soaks up the flavorful sauce and adds a lovely color contrast. Garnish with fresh cilantro, diced avocado, or a squeeze of lime if desired — though the recipe is delicious as-is. A few tortilla chips on the side are also great for scooping up the cheesy bits.
This dish is hearty enough to stand alone, but it also works well as a filling for tacos or burritos. Spoon it into warm tortillas and top with shredded lettuce and a dollop of sour cream. For a lighter option, serve it over a bed of greens or with a side of grilled vegetables. The leftovers are just as good the next day, so consider making a double batch.

Slow-Cooker Oaxaca Queso Chicken Thighs

Ingredients
- 6 boneless skinless chicken thighs
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup frozen fire-roasted corn kernels
- 1 1/2 cups chunky roasted red tomato salsa
- 8 oz Oaxaca cheese, shredded
- 1 cup Mexican four-cheese blend, shredded
- cooked Spanish red rice, for serving
Instructions
- Place the boneless skinless chicken thighs in the bottom of a 7-quart slow cooker in a single layer, overlapping slightly if needed. Rinse the black beans in a colander and drain well. Sprinkle the black beans and the frozen fire-roasted corn evenly over the chicken. Pour the chunky roasted red tomato salsa over the top, spreading it to cover most of the surface.
- Sprinkle the shredded Oaxaca cheese and the Mexican four-cheese blend evenly over the entire surface of the salsa, beans, and corn. Use a spoon to gently pat the cheese down so it covers the mixture as much as possible. Do not stir.
- Cover the slow cooker with its lid. Cook on the low setting for 6 to 7 hours, until the chicken is fork-tender and registers 165°F (74°C) in the thickest part. Avoid lifting the lid during the first 5 hours to keep the heat steady.
- Turn off the slow cooker and let the dish rest, uncovered, for 10 minutes. This allows the sauce to thicken slightly and the cheese to set a bit. Serve hot over cooked Spanish red rice, using a large spoon to scoop through the chicken and cheesy sauce.
