Tips for success
For the best flavor, choose a high-quality red enchilada sauce — one with a short ingredient list and real chiles. The sauce is the backbone of this dish, so it matters. If you prefer a spicier kick, use a hot enchilada sauce or add a few dashes of hot sauce before serving. You can also stir in some diced green chiles for extra flavor and heat.
This recipe is incredibly versatile. Serve it over steamed white rice, cilantro-lime rice, or quinoa. It also works wonderfully as a filling for tacos, burritos, or enchiladas.
Leftovers can be stored in the refrigerator for up to 4 days and taste even better the next day as the flavors meld. Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed.
Variations
- Spicy Chipotle: Add 1 to 2 chopped chipotle peppers in adobo sauce to the enchilada sauce before pouring over the chicken. This adds a smoky, spicy depth that pairs beautifully with the cheese and beans. Adjust the amount to your heat preference.
- Vegetarian Version: Replace the chicken with 2 cups of cubed butternut squash or sweet potato, and add an extra can of pinto beans. Cook on low for 4 hours, or until the vegetables are tender. The cheese and sauce are still the star, making it a hearty meatless meal.
- Green Enchilada: Swap the red enchilada sauce for green enchilada sauce (salsa verde). The flavor becomes brighter and tangier, and it pairs well with the Oaxaca cheese. You can also add a handful of fresh spinach or cilantro at the end for extra freshness.
- Creamy Version: Stir in 1/2 cup of sour cream or Mexican crema right before serving, off the heat. This makes the sauce extra creamy and rich. For a lighter option, use plain Greek yogurt. Make sure to remove the pot from the heat before stirring to prevent curdling.

Store leftover chicken and sauce in an airtight container in the refrigerator for up to 4 days. The flavors continue to develop as it sits, making it even more delicious the next day.
Reheat gently on the stovetop over medium-low heat or in the microwave, stirring occasionally, until warmed through. Add a splash of chicken broth or water if the sauce has thickened too much.
This recipe is perfect for meal prep. Assemble the slow cooker the night before (without the cheese, if you prefer) and store it in the refrigerator. In the morning, let it sit on the counter for 30 minutes, then cook on low as directed.
The cheese can be added right before cooking, or you can add it halfway through to keep it extra melty. You can also cook the entire dish ahead and reheat portions throughout the week.
Serving ideas
Serve this slow-cooker chicken thighs dish over steamed white rice or cilantro-lime rice to soak up the rich sauce. Warm flour or corn tortillas on the side are perfect for scooping up every bite.
For a fresh contrast, add a simple green salad with a lime vinaigrette, or top the chicken with diced avocado, chopped cilantro, and a squeeze of lime juice.
This dish is hearty enough to stand alone, but it also pairs well with refried beans, Mexican street corn, or a simple slaw. For a low-carb option, serve it over cauliflower rice or with a side of roasted vegetables. The leftovers are fantastic in breakfast burritos or as a filling for quesadillas.

Slow-Cooker Oaxaca Enchilada Chicken Thighs

Ingredients
- 6 boneless skinless chicken thighs
- 2 cups red enchilada sauce
- 1 can (15 oz) pinto beans, drained and rinsed
- 8 oz Oaxaca cheese, shredded
- 1 cup Mexican four-cheese blend, shredded
Instructions
- Place the chicken thighs in an even layer in the bottom of a 6-quart slow cooker. Pour the red enchilada sauce over the chicken, making sure the thighs are mostly covered. Add the drained pinto beans and gently stir to distribute them around the chicken.
- Sprinkle the shredded Oaxaca cheese and Mexican four-cheese blend evenly over the top of the chicken and sauce. Do not stir — the cheese will melt into a blanket as it cooks.
- Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). The cheese will melt and bubble around the edges.
- Once the chicken is cooked through, stir gently to combine the melted cheese with the sauce and beans. Serve the chicken and sauce over warm rice, with extra cheese or a sprinkle of fresh cilantro if desired.
