Tips for success

To get the best texture, shred the Oaxaca cheese yourself—pre-shredded cheese often contains anti-caking agents that prevent smooth melting.

For a deeper flavor, toast the taco seasoning in a dry skillet for a minute before adding it. If you prefer a spicier dish, use hot green chiles or add a pinch of cayenne with the seasoning.

For a complete meal, serve with warm corn tortillas or over cilantro-lime rice. The sauce is also delicious on top of crispy tostadas or as a filling for tacos.

Leftovers can be used in quesadillas or burrito bowls. The dish thickens as it cools, so add a splash of chicken broth when reheating if needed.

Variations

  • Spicy Chorizo Version: Substitute half the chicken with cooked chorizo sausage, sliced, and reduce the taco seasoning to 1 tablespoon. The chorizo's smoky, spicy flavor infuses the sauce, making it even more robust. Serve with extra cilantro.
  • Creamy Sour Cream Finish: After cooking, stir in 1/2 cup of sour cream to make the sauce extra creamy and tangy. This mellows the heat from the chiles and adds a luxurious texture. Best served over rice or with crusty bread.
  • Vegetarian Bean and Cheese: Omit the chicken and use 2 cans of drained black beans. Cook on low for 2 hours, then add the cheese and salsa and cook for 1 more hour. The beans absorb the flavors and provide a hearty, protein-rich alternative.
  • Green Chile and Potato: Add 2 cups of diced potatoes (Yukon Gold or russet) to the bottom of the slow cooker before adding the chicken. The potatoes cook in the sauce and become tender, adding a comforting, filling element. Increase the salsa to 1 1/2 cups.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth to restore the sauce's creamy texture.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a little chicken broth if the sauce has thickened too much.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors meld even more overnight, making it a great make-ahead meal. Reheat gently on the stovetop or in the microwave, adding a little broth or water to loosen the sauce if it has thickened.

Assemble the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed.

You may need to add 30 minutes to the cooking time since you're starting from cold. This is perfect for busy mornings—just set it and leave it.

Serving ideas

Serve the chicken and sauce over steamed white rice or Mexican rice, with a side of warm tortillas for scooping. A sprinkle of fresh cilantro and a squeeze of lime brighten the dish, though the recipe is delicious as-is. For a low-carb option, serve over cauliflower rice or with a simple green salad.

This hearty dish also works well as a filling for tacos or burritos. Warm corn tortillas and top with shredded cabbage, avocado, and a dollop of sour cream.

The sauce is rich enough to stand alone, so keep sides simple. A cold beer or sparkling water with lime pairs beautifully with the smoky, cheesy flavors.

Frequently asked questions

Can this recipe be made with chicken breasts instead of thighs?
Yes, but reduce the cooking time to about 2–3 hours on low, or until the breasts reach 165°F (74°C). Chicken breasts can dry out if cooked too long, so check early. The sauce will still be delicious, but the texture will be leaner and less forgiving.
What if Oaxaca cheese is not available?
Use mozzarella, Monterey Jack, or a combination of both. These cheeses melt well and have a mild, creamy flavor similar to Oaxaca. Avoid aged cheeses like cheddar, which can become oily and grainy when melted slowly.
Can this dish be frozen?
Yes, freeze in an airtight container for up to 3 months. Thaw in the refrigerator overnight and reheat gently on the stovetop or microwave. The sauce may separate slightly upon reheating; stir in a splash of broth to bring it back together.
Is this recipe spicy?
The heat level depends on the green chiles and taco seasoning. Mild roasted green chiles and regular taco seasoning produce a mild, family-friendly dish. For more heat, use hot green chiles, add a minced jalapeño, or sprinkle in cayenne pepper to taste.
Can this be cooked on high instead of low?
Yes, cook on high for about 2 1/2 to 3 hours, or until the chicken reaches 165°F (74°C). The sauce may reduce more quickly, so keep an eye on it. Low heat is preferred for the most tender chicken and a silkier sauce.

Slow-Cooker Oaxaca Chicken Thighs with Hatch Chile Corn

Prep 10 minCook 4 hTotal 4 h 10 minServes 6
Slow cooker filled with tender chicken thighs in a creamy Oaxaca cheese sauce with green chiles and corn, steam rising.

Ingredients

  • 6 boneless skinless chicken thighs
  • 4 oz roasted green chiles, chopped
  • 1 cup frozen sweet corn, thawed
  • 2 tbsp taco seasoning
  • 8 oz Oaxaca cheese, shredded
  • 1 cup Mexican four-cheese blend, shredded
  • 1 cup salsa verde

Instructions

  1. Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Season both sides with half of the taco seasoning. Spread the chopped green chiles and corn evenly over the chicken.
  2. Sprinkle the shredded Oaxaca cheese and Mexican four-cheese blend over the chicken. Pour the salsa verde over the top, spreading it gently to cover the cheese. Do not stir.
  3. Cover the slow cooker and cook on low for 4 hours, or until the chicken is fork-tender and registers 165°F (74°C) in the thickest part. The cheese will melt into a blistered blanket over the bubbling sauce.
  4. Insert an instant-read thermometer into the thickest part of a chicken thigh. It should read at least 165°F (74°C). If not, continue cooking for 30 more minutes and check again.
  5. Using a large spoon, gently stir the sauce to combine the melted cheese with the braising liquid. Scoop the chicken and sauce onto plates with warm rice. Serve immediately.
