Before you start

Before starting, ensure your slow cooker is clean and ready to use. Prepare the chicken by trimming off any excess fat if desired. Wash and core the apples, cutting them into uniform quarters.

Slice the mushrooms into even pieces to ensure they cook at the same rate as the apples. Having all ingredients measured and ready to go makes the assembly process very quick and efficient, allowing you to get the meal started in just a few minutes.

Ingredients at a glance (5)
  • 4 pieces chicken thighs, skin-on or boneless
  • 2 large apples, quartered
  • 8 oz mushrooms, sliced
  • 1 tsp dried herbs, such as thyme or rosemary
  • 1 cup hard cider

Instructions

Ingredient Assembly

  1. Assemble the ingredients
Place the raw chicken thighs into the bottom of the slow cooker insert. Distribute the quartered apples and sliced mushrooms evenly over the top of the chicken pieces.
Look for Ensure the chicken is in a single layer for even cooking.
Tip Removing excess fat from the chicken thighs helps reduce the grease in the final sauce.

At this stage, the slow cooker insert should contain the layered chicken, apples, and mushrooms.

Everything is neatly arranged, providing a solid foundation for the flavors to meld together as the cooking process begins. Ensure the chicken is positioned at the bottom so it can absorb the juices as they develop.

Seasoning and Liquid Addition

  1. Season and add liquid
Sprinkle the dried herbs over the chicken, apples, and mushrooms. Pour the hard cider over the entire mixture to ensure all ingredients are lightly coated.
Look for The liquid should pool at the bottom of the slow cooker.
Tip Use a dry herb mix like poultry seasoning for a deeper flavor profile.

The dried herbs should be distributed evenly, and the hard cider should have coated the ingredients well. The smell of the raw cider and herbs will be light and fresh. Check that the liquid level is sufficient to start the braising process, but do not exceed the capacity of your slow cooker.

Cooking and Finishing

  1. Slow cook and finish
Cover the slow cooker and set to low. Cook for 4 hours until the chicken reaches an internal temperature of 165°F (74°C). Remove the chicken, let it rest for 5 minutes before serving.
Look for The chicken should be tender and easily pierced with a fork.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce is too thin, simmer it in a saucepan on the stove for a few minutes to reduce.

The kitchen should be filled with the aromatic scent of apples, cider, and savory herbs. The sauce will have thickened slightly and turned a rich, glossy color. The chicken should be completely cooked through, and the apples should be tender. Check the internal temperature to confirm safety before serving.

Common mistakes

Avoid lifting the lid of the slow cooker during the first three hours of cooking. Every time the lid is opened, heat escapes, which significantly increases the total cooking time required.

Additionally, avoid over-crowding the slow cooker; while it is designed for a large volume of food, keeping the ingredients in a relatively even layer helps the heat circulate more effectively throughout the cooking process.

How to tell it’s done

The chicken is perfectly cooked when it reaches an internal temperature of 165°F (74°C) measured with a meat thermometer at the thickest part.

The meat should be opaque, tender, and pulling slightly away from the bone if you are using bone-in pieces. The apples should be soft enough to be pierced easily with a fork but still hold their shape.

  • Poultry: 165°F (74°C) in the thickest part

Coming up in Part 3: common questions

  • Can the chicken be cooked on high instead of low?
  • Is it necessary to peel the apples?
  • Can this dish be frozen for later?
