Before you start

Before starting, ensure your slow cooker insert is clean and dry. Gather all ingredients, including the frozen meatballs, which should remain in the freezer until the very last moment to maintain their integrity.

Prepare a serving platter nearby so the transition from the slow cooker to the table is seamless. If you are making your own buttery hot sauce blend, have the butter melted and whisked into the hot sauce before beginning the layering process to ensure the mixture is ready to pour immediately.

Ingredients at a glance (4)
  • 24 count frozen precooked chicken meatballs
  • 1/2 cup dill pickle chips
  • 1 tsp cayenne pepper
  • 1 cup buttery hot sauce

Instructions

Preparation and layering

  1. Layer the meatballs
Place the frozen precooked chicken meatballs into the base of the slow cooker insert. Ensure they are spread in an even layer to allow for consistent heating during the slow cooking process.
Look for meatballs should cover the bottom of the insert
Tip Do not thaw the meatballs before adding them to the slow cooker.

At the end of this phase, the slow cooker should be filled with an even layer of meatballs, topped with the pickle chips and the spicy sauce mixture. The ingredients are now positioned to begin the slow infusion process. Ensure that the sauce has distributed somewhat into the gaps between the meatballs, which will help keep them hydrated as they warm up. The setup should look neat, with the sauce ready to coat everything as the heat rises.

Seasoning and saucing

  1. Season and add sauce
Scatter the dill pickle chips over the top of the meatballs. Dust the cayenne pepper evenly across the mixture using a small ramekin for control. Pour the buttery hot sauce over everything, ensuring the meatballs are thoroughly coated.
Look for the sauce should pool slightly at the bottom
Tip Use a silicone spatula to gently fold the sauce if needed.

Once the cayenne and hot sauce are added, the dish should look vibrant and ready for the heat. The cayenne should be evenly dusted over the pickles and meatballs. The sauce should be visible, pooling slightly at the base of the insert. Check that the pickle chips are distributed throughout rather than clumped in one area, as this ensures every serving gets a bit of that tangy crunch and flavor in the final dish.

Cooking and finishing

  1. Cook and serve
Cover the slow cooker and cook on low for 2 hours until the meatballs reach an internal temperature of 160°F (71°C). Once finished, transfer the meatballs to a serving plate, drizzling any remaining sauce from the insert over them.
Look for meatballs should be heated through and glossy
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Serve immediately while the sauce is warm and pourable.

The final phase concludes when the meatballs are hot and the sauce has reduced slightly into a thick, clinging glaze. The kitchen should smell savory and spicy. The meatballs should appear plump and uniformly coated in the deep red sauce.

Before serving, give the meatballs a very gentle stir if necessary to ensure even coverage, being careful not to break them apart. They are now at the perfect temperature to be transferred to your serving platter.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven heating and result in some meatballs being cold in the center while others overcook. Ensure the meatballs are in a single layer or at most two layers if your cooker is large enough.

Another error is overcooking the meatballs; since they are already pre-cooked, they only need enough time to reach the proper serving temperature. Keep a close eye on the time to ensure they remain moist and do not become rubbery.

How to tell it’s done

The meatballs are ready when they are heated through and reach a safe internal temperature of 160°F (71°C). You will know they are done when the sauce appears thick, glossy, and is bubbling gently around the edges of the meatballs.

The meatballs themselves should be tender to the touch and fully coated in the red sauce. If you are using a meat thermometer, insert it into the center of a meatball from the middle of the cooker to confirm the temperature.

  • Ground meat: 160°F (71°C) in the thickest part
