Tips for success
For the most flavorful brisket, choose a piece with good marbling. Trim only the hard, white fat, leaving a thin layer to keep the meat moist.
The onion soup mix is salty, so taste before adding more salt. If you prefer a smoother sauce, whisk the sour cream and mustard together before spreading, but the video shows them dolloped separately.
The slow cooker does the work, but patience is key. Do not rush the cooking by using HIGH heat; LOW yields the most tender results.
If you have time, let the brisket rest in the sauce for 15 minutes after shredding to absorb more flavor. Serve over rice, mashed potatoes, or crusty bread to soak up every bit of the creamy gravy.
Variations
- Add Vegetables: Add sliced onions or carrots to the bottom of the slow cooker along with the brisket. They will absorb the cooking juices and become sweet and tender. You can also add potatoes, but they may take longer to cook.
- Spice It Up: Add a teaspoon of smoked paprika or a pinch of cayenne pepper to the onion soup mix for a smoky, spicy kick. Or stir in a tablespoon of horseradish with the sour cream for extra heat.
- Use Chicken: Substitute boneless, skinless chicken thighs for the brisket. Reduce the cooking time to 4-6 hours on LOW, or until the chicken is tender and cooked through to 165°F (74°C). The sauce will be lighter but still creamy.
- Make It Gluten-Free: Use a gluten-free onion soup mix and ensure the beef au jus is gluten-free. Serve over rice or gluten-free noodles. The rest of the ingredients are naturally gluten-free.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce may thicken; add a splash of broth or water when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, stirring occasionally, or in the microwave in 30-second bursts.
Refrigerate leftover brisket and sauce in an airtight container for up to 4 days. The flavors will meld and deepen overnight. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the sauce has thickened too much. The brisket also freezes well for up to 3 months.
This recipe is perfect for making ahead. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. The brisket can also be fully cooked, shredded, and stored in the refrigerator for up to 3 days. Reheat gently before serving.
Serving ideas
Serve the shredded brisket over steamed white rice, spooning plenty of the creamy mushroom-Dijon gravy over the top. The rice soaks up the sauce, making every bite rich and satisfying.
For a heartier meal, serve over mashed potatoes or egg noodles. The dish also pairs well with a simple green salad or roasted vegetables to balance the richness.
This brisket is a complete meal in one pot, but it shines when served with a starch. The creamy, tangy sauce is the star, so be generous when plating. For a low-carb option, serve over cauliflower rice or alongside sautéed greens. Leftovers make excellent sandwiches on crusty rolls with a little extra sauce.

Slow-Cooker Mushroom Dijon Cream Brisket

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 1 cup sour cream
- 1/4 cup whole-grain Dijon mustard
- 1 cup beef au jus
- steamed white rice, for serving
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Sprinkle the dry onion soup mix evenly over the top of the brisket. Scatter the halved cremini mushrooms around the sides of the brisket.
- Dollop the sour cream over the top of the brisket and mushrooms. Spread the whole-grain Dijon mustard over the sour cream. Pour the beef au jus along the side of the slow cooker, avoiding the top of the brisket to keep the seasoning in place.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the brisket is fork-tender and easily shreds. Do not lift the lid during cooking to maintain even heat. Let it rest for 3 minutes before slicing.
- After the minimum cooking time, insert a fork into the thickest part of the brisket. The meat should shred easily with little resistance. If it is still tough, continue cooking for another 30 minutes and check again. Let it rest for 3 minutes before slicing.
- Once the brisket is fork-tender, remove it from the slow cooker and place it on a cutting board. Let it rest for at least 3 minutes before shredding or slicing. This allows the juices to redistribute.
- Using two forks, shred the brisket into bite-sized pieces. Return the shredded meat to the slow cooker and stir gently to coat with the creamy mushroom gravy. Serve hot over steamed white rice, spooning extra gravy over the top. Let it rest for 3 minutes before slicing.
