Tips for success
For the best texture, cook the brisket on LOW rather than HIGH. Low heat gives the collagen more time to break down, resulting in a more tender shred.
If you're short on time, HIGH for 5 to 6 hours can work, but the meat may be slightly less tender. Always let the brisket rest in the liquid before shredding to keep it moist.
The jus is the star — don't let it go to waste. Spoon it generously over the meat and mushrooms when serving.
If you find the sauce too thin, you can thicken it with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) stirred into the pot and cooked for 10 minutes. But honestly, the natural jus is perfect as-is.
Variations
- Add Garlic and Herbs: Mince 4 cloves of garlic and sprinkle over the brisket along with the onion soup mix. Add a few sprigs of fresh thyme or rosemary for an herby note.
- Spicy Kick: Add 1 teaspoon of red pepper flakes or a diced jalapeño to the pot with the mushrooms. The heat will mellow during the long cook, leaving a subtle warmth.
- Balsamic Glaze: Stir 2 tablespoons of balsamic vinegar into the jus after cooking. The acidity brightens the rich sauce and adds a touch of sweetness.
- Beer-Braised: Replace 1/2 cup of the butter with 1/2 cup of dark beer, such as stout, poured over the brisket before cooking. The beer adds depth and malty flavor.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 4 days. The jus will solidify slightly due to the butter, but it will re-melt when reheated.
- Freezer
- Freeze the shredded brisket with its jus in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a covered skillet over medium-low heat, adding a splash of water or beef broth to loosen the sauce.

This recipe is ideal for making ahead. Cook the brisket, shred it, and store it in the refrigerator with the jus for up to 4 days. The flavors meld even more overnight. Reheat gently before serving, adding a splash of beef broth if needed to loosen the sauce.
Serving ideas
Serve the shredded brisket over whipped Yukon Gold mashed potatoes, egg noodles, or creamy polenta. The mushrooms and onions from the pot are essential — spoon them over the top.
A side of crusty bread or a simple green salad rounds out the meal. The jus is perfect for sopping up with bread.
For a low-carb option, serve the brisket over cauliflower mash or alongside roasted vegetables. The rich, buttery sauce works with almost any side.
Leftovers make excellent sandwiches — pile the beef on a toasted bun with a little horseradish or pickled onions.

Slow Cooker Mushroom Butter Brisket

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 1/2 cup salted butter (1 stick)
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Sprinkle the dry onion soup mix evenly over the top of the brisket. Scatter the halved cremini mushrooms around the sides of the brisket, tucking them into the corners of the slow cooker.
- Place the whole stick of salted butter on top of the seasoned brisket. No need to melt it first; the slow cooker will do that gently.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, until the brisket is fork-tender and easily shreds. Do not open the lid during cooking; the trapped steam helps break down the meat. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the brisket rest in the liquid for 10 minutes. Transfer the brisket to a cutting board and shred with two forks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir to coat with the jus.
- Serve the shredded brisket with the mushrooms and onions from the pot, spooning extra jus over the top. Mashed potatoes or crusty bread are excellent for soaking up the buttery sauce.
