Tips for success
For the best texture, do not overcook the tortellini. Refrigerated pasta cooks faster than dried, so check it at the lower end of the cooking range. If you are using frozen tortellini, add an extra 30 minutes to the cooking time.
Also, be generous with the mozzarella—it creates that irresistible cheese pull. Grate your own mozzarella for the best melt; pre-shredded varieties often contain anti-caking agents that prevent smooth melting.
To make this dish even easier, brown the sausage a day ahead and keep it refrigerated. You can also assemble the entire slow cooker insert the night before, store it in the fridge, and start cooking in the morning.
Just add 30 minutes to the cooking time since the ingredients start cold. The leftovers are fantastic—the flavors meld even more overnight, and the pasta absorbs the sauce, making every bite more flavorful.
Variations
- Spicy Sausage Version: Swap sweet Italian sausage for hot Italian sausage, or add 1/2 teaspoon red pepper flakes with the marinara. The heat cuts through the creamy sauce nicely.
- Vegetarian Option: Omit the sausage and add an extra 8 ounces of tortellini and 1 cup of sautéed mushrooms. The mushrooms add an earthy, meaty texture.
- Extra Veggie Boost: Stir in 2 cups of baby spinach or chopped kale during the last 30 minutes of cooking. The greens wilt into the sauce and add color and nutrients.
- Cheese Lover's Dream: Increase the mozzarella to 3 cups and add 1/2 cup grated Parmesan to the top before cooking. The extra cheese creates a golden, bubbly crust.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. The sauce may thicken; add a splash of water or broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring often, until hot and bubbling.
Store leftover tortellini in an airtight container in the refrigerator for up to 4 days. The pasta will absorb some sauce, so you may want to add a splash of water or extra marinara when reheating.
Let the dish cool for no more than 2 hours before refrigerating. Reheat gently on the stovetop or in the microwave, stirring occasionally, until hot and bubbling.
This recipe is perfect for make-ahead meals. Brown the sausage and assemble all ingredients in the slow cooker insert, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook on low for 4 to 5 hours. You can also freeze the fully cooked dish for up to 3 months—thaw overnight in the fridge and reheat on the stovetop or in the microwave.
Serving ideas
Serve this slow cooker tortellini straight from the pot for a casual family dinner, or plate it on a white dish for a more polished look. A sprinkle of fresh basil or parsley adds color, and a side of garlic bread or a crisp green salad rounds out the meal. For extra richness, top each serving with a drizzle of olive oil or a dusting of grated Parmesan.
This dish is hearty enough to be a complete meal on its own, but it also pairs well with simple sides. Roasted vegetables, a Caesar salad, or sautéed spinach are all excellent choices. For a family-style presentation, set the slow cooker on the table and let everyone serve themselves. The cheese will stay warm and stretchy for a while.

Slow-Cooker Mozzarella Sausage Tortellini

Ingredients
- 1 lb sweet Italian pork sausage, browned and crumbled
- 20 oz refrigerated three-cheese tortellini
- 24 oz crushed San Marzano marinara sauce
- 8 oz cream cheese, softened and cubed
- 2 cups shredded whole-milk mozzarella
Instructions
- Heat a large skillet over medium-high heat. Add the sweet Italian pork sausage and cook, breaking it up with a wooden spoon, until browned and crumbled, about 6 to 8 minutes. Drain any excess fat if needed. Transfer the browned sausage to the bottom of a 6-quart slow cooker.
- Scatter the refrigerated three-cheese tortellini over the browned sausage in an even layer. Pour the crushed San Marzano marinara sauce over the top, spreading it to cover the tortellini and sausage as much as possible.
- Place the softened cream cheese in the center of the slow cooker. Sprinkle the shredded whole-milk mozzarella evenly over the top, covering the cream cheese and the sauce.
- Cover the slow cooker with its lid. Cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the tortellini is tender and the sauce is bubbling around the edges. Do not stir during cooking, as this can break up the tortellini.
- After cooking, stir the mixture gently with a large spoon to combine the melted cream cheese and mozzarella into the sauce. The sauce should be creamy and pinkish-orange, and the tortellini should be tender and coated.
- Spoon the hot tortellini and sausage onto plates or into bowls. Serve immediately, with extra shredded mozzarella or grated Parmesan on the side if desired.
