Before you start
Before starting, cut the chicken breasts into bite-sized cubes, about 1-inch pieces. If using frozen ravioli, there's no need to thaw them — they can go straight into the slow cooker.
Soften the cream cheese by letting it sit at room temperature for 15-20 minutes, then cut it into chunks so it melts more easily. Measure out the vodka sauce and mozzarella. Have all ingredients ready at the counter before you begin layering.
Ingredients at a glance (5)
- 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
- 20 oz jumbo four-cheese ravioli (fresh or frozen)
- 24 oz vodka sauce
- 8 oz cream cheese, softened and cut into chunks
- 2 cups shredded whole-milk mozzarella
Instructions
Layer and Cook
- Layer the IngredientsPlace the cubed chicken breasts in an even layer at the bottom of the slow cooker. Scatter the jumbo ravioli over the chicken. Pour the vodka sauce evenly over the ravioli and chicken, making sure the sauce covers most of the ingredients. Dot the surface with chunks of cream cheese, then sprinkle the shredded mozzarella over the top.Look for The slow cooker should be filled with layered ingredients, sauce covering the pasta and chicken.Tip Use a spatula to gently press the ravioli into the sauce so they stay moist during cooking.
- Cover and Cook on LowCover the slow cooker with the lid and cook on low for 4 to 5 hours, or until the chicken is cooked through and the ravioli are tender. Avoid opening the lid during cooking to maintain heat and moisture. The sauce will bubble gently and the cheese will melt into a creamy, stretchy sauce.Look for The sauce is bubbling, the cheese is melted, and the chicken is no longer pink.Safe temperature 165°F (74°C) internal temperature (poultry)Tip If using frozen ravioli, check for doneness at the 4-hour mark; fresh ravioli may cook faster.
At the end of this phase, the slow cooker is filled with layered ingredients. The sauce covers the chicken and ravioli, and the cream cheese and mozzarella are on top.
After 4-5 hours on low, the sauce is bubbling, the cheese is melted, and the chicken is cooked through. The aroma is rich and savory, with a hint of tomato and garlic.
Stir and Adjust
- Stir GentlyOnce the chicken reaches 165°F (74°C) and the ravioli are tender, gently stir the mixture to combine the melted cream cheese and mozzarella into the sauce. Be careful not to break the ravioli. The sauce should be smooth, creamy, and pinkish-orange from the vodka sauce and cheese.Look for The sauce is thick and creamy, with no visible chunks of cream cheese.Tip Stir in a folding motion to keep the ravioli intact.
- Taste and Adjust SeasoningTaste the sauce and adjust with salt and pepper if needed. The vodka sauce and cheeses already add salt, so season lightly. If the sauce seems too thick, stir in a splash of warm water or chicken broth to reach the desired consistency. Keep the slow cooker on warm while serving.Look for The sauce coats the back of a spoon and has a balanced flavor.Tip A splash of pasta water works well if you have some on hand.
After stirring, the sauce is smooth and creamy, with no visible chunks of cream cheese. The ravioli are intact, and the chicken pieces are tender. The dish looks like a creamy pink pasta bake. Taste and adjust seasoning if needed, and add a splash of liquid if the sauce is too thick.
Serve
- Serve ImmediatelySpoon the hot chicken and ravioli onto serving plates or into bowls. Make sure each serving gets a generous amount of the creamy sauce and melted cheese. Serve hot, with extra mozzarella or grated Parmesan on the side if desired (not shown in video).Look for The cheese stretches as you spoon the dish, and steam rises from the plates.Tip Use a wide spoon to lift the ravioli without breaking them.
The dish is served hot, with cheese stretching from the spoon. The sauce clings to the pasta and chicken, and steam rises from the plates. It looks and smells like a comforting, cheesy dinner. Serve immediately for the best texture.
Common mistakes
One common mistake is lifting the lid too often during cooking, which releases heat and extends the cooking time. Another is using a slow cooker that's too small — the ingredients need room to cook evenly.
Overcooking the ravioli can make them fall apart, so check them at the minimum recommended time. Finally, don't skip the stirring step at the end; it ensures the cream cheese and mozzarella are fully incorporated into the sauce.
How to tell it’s done
The dish is done when the chicken reaches an internal temperature of 165°F (74°C) and the ravioli are tender but not mushy. The sauce should be bubbling around the edges, and the cheese should be fully melted and incorporated.
To check the chicken, insert an instant-read thermometer into a few cubes — they should register at least 165°F (74°C). The sauce should be thick and creamy, not watery.
- Poultry: 165°F (74°C) in the thickest part
