Tips for success
For the best texture, cut the cauliflower into uniform florets, about 1 1/2 inches across. This ensures they cook at the same rate as the chicken.
If you prefer a thicker sauce, remove the lid for the last 15 minutes of cooking and let it reduce. The sauce will also thicken as it stands, so don’t be tempted to add flour or cornstarch.
This recipe is forgiving—you can add a pinch of red pepper flakes for heat, a handful of spinach in the last 30 minutes, or swap the cauliflower for broccoli.
The garlic herb butter can be adjusted to taste, and you can use fresh garlic and herbs if you prefer. For extra cheesiness, top with more mozzarella just before serving.
Variations
- Add Bacon: Cook 4 slices of bacon until crisp, crumble, and stir into the finished dish. The smoky flavor pairs beautifully with the creamy sauce.
- Make It Spicy: Add a diced jalapeño or a pinch of red pepper flakes along with the other ingredients. Or stir in a tablespoon of hot sauce just before serving.
- Use Broccoli: Swap the cauliflower for broccoli florets. Add them during the last hour of cooking so they stay bright and crisp-tender.
- Skip the Pasta: For a low-carb version, serve the creamy chicken over cauliflower rice or zucchini noodles. The sauce works just as well.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of broth or milk to restore the creamy texture.
- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in the microwave in 1-minute increments, stirring, or in a saucepan over medium-low heat, adding a splash of broth to keep it creamy.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a splash of milk or chicken broth when reheating to loosen it. Reheat gently in the microwave or on the stovetop until heated through.
You can assemble the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. Add 30 minutes to the cook time if starting from cold. Or cook the full recipe, then refrigerate for up to 3 days and reheat gently.
Serving ideas
Serve this creamy chicken and cauliflower over al dente penne pasta, as shown in the video, for a satisfying main course. The sauce clings to the pasta, making every bite rich and flavorful.
You can also serve it over rice, mashed potatoes, or with crusty bread for dipping. For a low-carb option, skip the starch and enjoy it as a hearty bowl.
Garnish with fresh parsley or chives, if you like, and a crack of black pepper. A side salad with a simple vinaigrette balances the richness.
This dish is comforting and filling enough to be a meal on its own, but it also works as a side dish for a larger spread. Leftovers are just as good the next day.

Velvety Mozzarella Cauliflower Chicken Thighs: One-Pot Crockpot Dinner

Ingredients
- 2 lb boneless skinless chicken thighs
- 1 head cauliflower, cut into florets
- 1 can (10.5 oz) condensed cream of broccoli soup
- 2 cups shredded whole-milk mozzarella cheese
- 2 tbsp garlic herb butter, cut into pats
Instructions
- Place the chicken thighs in an even layer across the bottom of the slow cooker. Scatter the cauliflower florets over and around the chicken. The chicken should be mostly covered by the cauliflower, but a few pieces can peek through.
- Spoon the condensed cream of broccoli soup over the center of the chicken and cauliflower. Sprinkle the shredded mozzarella cheese evenly over the top. Dot with the garlic herb butter pats.
- Cover the slow cooker and cook on low for 4 hours, or until the chicken is fork-tender and registers 165°F (74°C) in the thickest part. The cauliflower should be tender but not mushy. Avoid lifting the lid during the first 3 hours to keep the heat steady.
- Using two forks, gently shred the chicken thighs directly in the slow cooker. Stir the shredded chicken and cauliflower into the sauce until everything is well coated. The sauce will be creamy and slightly stretchy from the melted mozzarella.
- Spoon the creamy chicken and cauliflower mixture over cooked penne pasta or your favorite noodles. Serve hot, with extra mozzarella or fresh herbs if desired.
