Tips for success
For the best flavor, sear the steak strips in a hot skillet before adding them to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste.
However, the recipe works perfectly without this step — the slow cooking still develops rich flavor. If you do sear, do it in batches to avoid overcrowding, and deglaze the pan with a splash of water or broth to capture the browned bits.
To make the sauce even creamier, stir in an extra dollop of sour cream just before serving. This is optional but adds a fresh tang that brightens the dish.
For a thicker sauce, remove the lid during the last 30 minutes of cooking to let some liquid evaporate. Conversely, if the sauce seems too thick, stir in a few tablespoons of beef broth or water to reach your desired consistency.
Variations
- Chicken Version: Replace skirt steak with 2 pounds boneless, skinless chicken thighs. Cook on low for 4 to 5 hours, until tender and shreds easily. Ensure chicken reaches 165°F (74°C) before serving.
- Extra Spicy: Add 1 diced fresh jalapeño or a teaspoon of chipotle powder along with the pickled jalapeños. Increase the amount of pickled jalapeños to 3/4 cup for more heat and tang.
- Smoky Twist: Use fire-roasted tomatoes with smoked paprika or add 1 teaspoon of smoked paprika to the slow cooker. This adds a subtle smokiness that complements the beef.
- Bean Boost: Add a can of drained black beans or pinto beans during the last hour of cooking. This stretches the dish and adds heartiness without changing the flavor profile.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of water or broth to loosen the sauce.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge, then reheat on the stovetop until hot.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a splash of broth or water if needed.
Store any leftover steak filling in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of water or broth to loosen it. Let the leftovers cool for no more than 2 hours before refrigerating to ensure food safety.
This recipe is ideal for meal prep. Assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook on low as directed. You can also cook the full batch, then freeze portions for future meals. The filling freezes well for up to 3 months.
Serving ideas
Serve the steak fajita filling in warm flour tortillas, letting everyone assemble their own tacos. Offer toppings like extra pickled jalapeños, chopped cilantro, diced onions, or a squeeze of lime — though the recipe is delicious as-is. The creamy, spicy filling pairs well with Mexican rice or a simple green salad.
For a low-carb option, serve the filling over crisp lettuce cups or a bed of shredded cabbage. It also works as a topping for nachos or baked potatoes.
The rich, saucy texture makes it versatile — use it in burritos, quesadillas, or even as a dip with tortilla chips. Warm tortillas are classic, but the filling is forgiving enough for any serving style.

Slow-Cooker Monterey Jack Skirt Steak Fajitas

Ingredients
- 2 lb skirt steak, sliced into strips
- 1 can (14.5 oz) fire-roasted diced tomatoes with green chiles
- 1/2 cup sliced pickled jalapeños
- 1/2 cup sour cream
- 2 cups shredded Monterey Jack cheese
- Warm flour tortillas, for serving
Instructions
- Place the sliced skirt steak strips in the bottom of a 6-quart slow cooker. Pour the fire-roasted diced tomatoes with green chiles and the sliced pickled jalapeños over the meat. Spread them evenly over the steak.
- Dollop the sour cream over the tomato mixture, then sprinkle the shredded Monterey Jack cheese evenly over the top. Do not stir. Cover the slow cooker with the lid.
- Set the slow cooker to low and cook for 6 to 8 hours, until the steak is fork-tender and easily shreds. The sauce will be bubbling and the cheese fully melted. Let it rest for 3 minutes before slicing.
- After 6 hours, check the internal temperature of the steak with an instant-read thermometer. It should read at least 145°F (63°C). If not, continue cooking and check again after 30 minutes.
- Once the steak reaches temperature, turn off the slow cooker and let the meat rest in the sauce for at least 3 minutes. This allows the juices to redistribute.
- Using tongs or two forks, transfer the steak strips to a cutting board. Shred or slice into bite-sized pieces. Return the meat to the slow cooker and stir gently into the sauce.
- Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in foil and place in a 350°F oven for 10 minutes. Keep them covered until serving.
- Spoon the steak mixture onto warm tortillas. Serve immediately, letting everyone build their own tacos or fajitas.
