Tips for success

For the best texture, do not over-stir the slow cooker after shredding. Gently fold the pork into the sauce so it stays in nice chunks rather than turning into a paste.

If you want more browning on the pork, you can sear the cubes in a hot skillet before adding them to the slow cooker — this adds a deeper flavor, but it is not necessary for this dump-and-go version.

To warm tortillas, wrap them in foil and place in a 350°F (175°C) oven for 10 minutes, or heat them in a dry cast-iron skillet for 30 seconds per side. Keep them warm in a clean kitchen towel until serving.

For a complete meal, serve with rice, beans, or a simple green salad. Fresh cilantro, diced onion, or a squeeze of lime would be lovely, but the recipe is delicious as-is.

Variations

  • Spicy Version: Add an extra 1/2 cup of pickled jalapeños, along with 1 tablespoon of the pickling liquid, for a more pronounced heat. You can also use pepper jack cheese instead of Monterey Jack for an extra kick.
  • Chicken Option: Swap the pork shoulder for 3 pounds of boneless, skinless chicken thighs. Cook on LOW for 6-7 hours or HIGH for 4 hours, until shreddable. The internal temperature should reach 165°F (74°C).
  • Smoky Twist: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of ground cumin along with the tomatoes. This adds a smoky, earthy depth that pairs well with the fire-roasted tomatoes.
  • Creamy Verde: Replace the fire-roasted tomatoes with a 10-ounce can of green enchilada sauce and add 1/4 cup chopped fresh cilantro. The sauce will be tangier and greener, with a different flavor profile.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
Freezer
Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a skillet over medium heat, stirring occasionally, until hot. Add a splash of water or broth to loosen the sauce if it has thickened too much.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools. Reheat gently in the microwave or in a skillet over medium-low heat, adding a splash of water or broth if needed to loosen the sauce. The flavors continue to develop overnight, making leftovers even more flavorful.

This recipe is ideal for meal prep. You can assemble the ingredients in the slow cooker the night before, cover, and refrigerate overnight. In the morning, place the slow cooker insert into the base and cook as directed.

If you are short on time, you can also cook the pork fully, shred it, and store it in the refrigerator for up to 4 days or freeze for up to 3 months.

Serving ideas

Serve the pork carnitas in warm flour tortillas, letting everyone build their own tacos. The creamy sauce clings to the meat, so you do not need much else — maybe a sprinkle of chopped cilantro or a few slices of avocado.

For a heartier meal, serve the carnitas over rice or alongside refried beans. The dish is rich and satisfying, so a little goes a long way.

If you have leftovers, they are wonderful in quesadillas, on nachos, or tucked into a burrito. The creamy sauce also works well as a topping for baked potatoes. For a lighter option, serve the carnitas on a bed of lettuce with a dollop of salsa. The flavors are bold enough that you can keep the sides simple.

Frequently asked questions

Can this recipe be made with pork loin instead of pork shoulder?
Yes, but pork loin is leaner and can dry out during the long cooking time. If using pork loin, reduce the cooking time to 6-7 hours on LOW and check for tenderness earlier. The pork is done when it reaches 145°F (63°C) and shreds easily. You may want to add a little chicken broth to keep it moist.
Can the cooking time be shortened?
You can cook this on HIGH for 4-5 hours instead of LOW for 8 hours. The pork will still be tender, but the flavor may not be as deep. Always check that the pork reaches 145°F (63°C) and is fork-tender before serving.
Why is the sauce thin after cooking?
If the sauce is too thin, the pork may have released a lot of liquid. You can thicken it by leaving the slow cooker lid off for the last 30 minutes of cooking, or by stirring in a slurry of 1 tablespoon cornstarch and 2 tablespoons water. Cook for another 10 minutes until thickened.
Can this be made without a slow cooker?
Yes, you can make this in a Dutch oven. Brown the pork in batches, then add the remaining ingredients. Cover and cook in a 300°F (150°C) oven for 3-4 hours, until tender. Check occasionally to ensure there is enough liquid, adding a splash of broth if needed.
How spicy is this dish?
The spice level is mild to medium, coming from the green chiles in the Rotel tomatoes and the pickled jalapeños. If you prefer less heat, use regular diced tomatoes and reduce the jalapeños to 1/4 cup. For more heat, add extra jalapeños or a dash of hot sauce.

Slow cooker pork carnitas with creamy tomato-jalapeño sauce and melted Monterey Jack cheese.

Ingredients

  • 3 lb boneless pork shoulder, cut into 1-inch cubes
  • 1 can (10 oz) fire-roasted diced tomatoes with green chiles (Rotel)
  • 1/2 cup sliced pickled jalapeños, drained
  • 1/2 cup sour cream
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Place the cubed pork shoulder into the slow cooker basin. Pour the fire-roasted diced tomatoes with green chiles over the meat. Add the sliced pickled jalapeños. Dollop the sour cream over the top, then sprinkle the shredded Monterey Jack cheese evenly over everything. Do not stir.
  2. Cover the slow cooker and cook on LOW for 8 hours or on HIGH for 4-5 hours, until the pork is fork-tender and easily shreds. Do not open the lid during the first 6 hours on LOW or the first 3 hours on HIGH to keep the heat steady. Let it rest for 3 minutes before slicing.
  3. Turn off the slow cooker. Using two forks, shred the pork directly in the sauce. Stir gently to coat the meat with the creamy tomato-jalapeño sauce. Let the mixture rest for 5 minutes before serving. Serve warm with flour tortillas.
