Tips for success
For the best flavor, use full-fat sour cream and a good-quality Monterey Jack that melts smoothly. Shred the cheese yourself from a block rather than buying pre-shredded, which often contains anti-caking agents that can affect the sauce's creaminess.
If you like extra heat, add a handful of fresh sliced jalapeños along with the pickled ones, or stir in a pinch of cayenne with the tomatoes.
This dish is wonderfully versatile. Serve it over rice, with tortilla chips for scooping, or as a filling for tacos or burritos. Leftover sauce is great for dipping.
If you prefer a thicker sauce, leave the slow cooker lid off for the last 20 minutes of cooking to let some liquid evaporate. Always taste before serving and adjust salt and acidity with a squeeze of lime or extra pickled juice.
Variations
- Spicy Black Bean Version: Add a drained can of black beans along with the tomatoes for extra fiber and heartiness. The beans absorb the sauce and make the dish even more filling. Serve over rice for a complete meal.
- Creamy Green Chile Version: Replace the fire-roasted tomatoes with a can of green enchilada sauce and add a drained can of diced green chiles. The flavor becomes more tangy and mildly spicy, with a vibrant green hue.
- Cheesy Casserole Version: After shredding the chicken, transfer the mixture to a baking dish, top with extra shredded Monterey Jack, and broil for 2 to 3 minutes until bubbly and browned. Serve with tortilla chips for dipping.
- Lighter Sour Cream Version: Use Greek yogurt in place of sour cream for a tangier, higher-protein sauce. Stir it in during the last 30 minutes of cooking to avoid curdling. The sauce will be slightly less rich but still creamy.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 2 months.
- Reheat
- Reheat in a covered skillet over medium-low heat, stirring occasionally, until warmed through.
Store leftover chicken in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; stir in a splash of chicken broth or water when reheating to loosen it. Let leftovers cool for no more than 2 hours before refrigerating.
This recipe is ideal for making ahead. Assemble the raw ingredients in the slow cooker insert, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time if starting from cold. Alternatively, cook the full recipe, cool, and refrigerate for up to 3 days; reheat gently on the stovetop or in the microwave.
Serving ideas
Serve the chicken hot, straight from the slow cooker, with warm flour tortillas on the side. Let each person spoon the chicken into their own tortilla and add any extras like chopped cilantro, diced avocado, or a squeeze of lime.
The creamy, spicy sauce is also delicious over steamed rice or quinoa, or spooned onto a bed of crisp lettuce for a low-effort salad.
For a heartier meal, top the chicken with crushed tortilla chips and a dollop of sour cream. The dish pairs well with a simple side of black beans or Mexican street corn. Leftovers make excellent quesadillas or nachos the next day. The sauce is rich and flavorful, so a little goes a long way.

Slow-Cooker Monterey Jack Jalapeño Chicken Thighs

Ingredients
- 6 boneless skinless chicken thighs
- 1 can (14.5 oz) fire-roasted diced tomatoes with green chiles
- 1/2 cup sliced pickled jalapeños
- 1 cup sour cream
- 2 cups shredded Monterey Jack cheese
- 8 warm flour tortillas
Instructions
- Place the boneless skinless chicken thighs in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Pour the fire-roasted diced tomatoes with green chiles evenly over the chicken. Scatter the sliced pickled jalapeños over the tomatoes.
- Dollop the sour cream over the tomato mixture in spoonfuls, spreading gently with the back of the spoon. Sprinkle the shredded Monterey Jack cheese evenly over the entire surface.
- Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is tender and easily shreds with a fork. The sauce should be bubbling gently around the edges.
- Use two forks to shred the chicken directly in the slow cooker into bite-size pieces. Stir the shredded chicken into the sauce until well combined. The sauce will thicken slightly as it mixes with the chicken.
- Warm the flour tortillas according to package directions. Spoon the chicken mixture onto a serving plate or directly into tortillas. Serve immediately, with extra pickled jalapeños on the side if desired.
