Tips for success

For the best texture, use a thick brownie batter rather than a thin cake batter. A fudgy brownie mix or a recipe with melted chocolate will give you a denser, more cake-like result that holds up well in the slow cooker.

If the batter is too thick to spread, let it sit at room temperature for a few minutes or warm it slightly in the microwave in 10-second bursts.

To make the sauce extra glossy, use Dutch cocoa powder, which is alkalized and less acidic than natural cocoa. It dissolves smoothly and gives a deep, dark color.

If you only have natural cocoa, add a pinch of espresso powder to enhance the chocolate flavor without making it taste like coffee. Don't skip the boiling water — it's essential for creating the sauce.

Variations

  • Peanut Butter Swirl: Drop spoonfuls of creamy peanut butter over the brownie batter before adding the brown sugar and cocoa. Swirl gently with a knife, then proceed as directed. The peanut butter melts into the sauce for a salty-sweet twist.
  • Mint Chocolate: Add 1/2 teaspoon peppermint extract to the brownie batter and sprinkle crushed peppermint candies over the top with the brown sugar. Serve with mint chocolate chip ice cream for extra mintiness.
  • Spiced Mexican Hot Chocolate: Mix 1 teaspoon ground cinnamon and a pinch of cayenne pepper into the brown sugar and cocoa mixture. The warm spices complement the rich chocolate and add a subtle heat that pairs well with vanilla ice cream.
  • Cherry Chocolate Fudge: Scatter 1 cup pitted fresh or frozen cherries over the brownie batter before adding the dry topping. The cherries soften and release their juice, creating a fruity contrast to the deep chocolate sauce.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. The cake and sauce will meld together; reheat gently before serving.
Freezer
Freeze the cooled cake and sauce in a freezer-safe container for up to 2 months.
Reheat
Reheat individual servings in the microwave for 30-60 seconds, or place the entire Crockpot insert back on low for 30 minutes.

Leftover lava cake can be stored in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools, but you can reheat individual servings in the microwave for 30-60 seconds to restore the molten texture.

You can prepare the batter and assemble the layers in the slow cooker insert up to 24 hours in advance. Cover and refrigerate, then add the boiling water just before cooking. You may need to add 15-30 minutes to the cooking time if starting from cold.

Serving ideas

Serve the lava cake warm, straight from the slow cooker, for the best experience. The contrast between the warm, tender cake and the cool, creamy ice cream is what makes this dessert irresistible.

Spoon extra hot fudge sauce over each serving, and consider adding a sprinkle of sea salt or a few fresh berries for a pop of color and flavor.

This dessert is perfect for casual gatherings, potlucks, or a cozy family dinner. It's self-saucing, so you don't need to make a separate sauce.

Just set out bowls and spoons and let everyone help themselves. The slow cooker keeps the cake warm for a while, so guests can come back for seconds.

Frequently asked questions

Why is the cake not cooking in the center?
The cake may be too thick if the slow cooker is too small. Make sure to use a 6-quart slow cooker and spread the batter evenly. Also, avoid opening the lid during cooking, as this releases heat and extends the cooking time. If the center is still underdone after 2.5 hours, cook for an additional 15-30 minutes.
Can this recipe be made with a cake mix instead of brownie batter?
Yes, you can use a boxed cake mix, but the texture will be lighter and more cake-like rather than fudgy. The cake mix may also produce a thinner sauce because it contains less fat. For best results, use a brownie mix or a fudgy cake recipe.
How do you prevent the sauce from becoming too watery?
The sauce should be thick and glossy when done. If it's watery, the cake may not have cooked long enough, or the slow cooker was too large, allowing the water to dilute the sauce. Cook for a little longer, and check that the cake is fully set.
Can this be made in an oven instead of a slow cooker?
Yes, you can bake it in a 9x13-inch baking dish at 350°F (175°C) for about 30-35 minutes, or until the top is set and the sauce is bubbling. The texture will be slightly different, but the taste will be similar.
Is it possible to make this recipe gluten-free?
Yes, use a gluten-free brownie mix or a gluten-free brownie recipe. Ensure that all other ingredients, such as the cocoa powder and brown sugar, are certified gluten-free. The rest of the recipe remains the same.

Crockpot Molten Hot Fudge Lava Cake

A glossy obsidian slow cooker filled with a rich chocolate lava cake, steam rising from the surface.

Ingredients

  • 1 batch thick chocolate brownie batter (about 3 cups)
  • 1 cup brown sugar
  • 1/2 cup Dutch cocoa powder
  • 2 cups boiling water
  • 1 pint vanilla bean ice cream, for serving

Instructions

  1. Spread the thick chocolate brownie batter evenly in the bottom of a 6-quart slow cooker insert. Use a spatula or the back of a spoon to smooth the top so it covers the entire bottom in an even layer.
  2. Sprinkle the brown sugar evenly over the batter, followed by the Dutch cocoa powder. Do not stir or mix the dry ingredients into the batter; they should remain on top in a separate layer.
  3. Carefully pour the boiling water over the entire surface of the brown sugar and cocoa layer. Do not stir. The water will pool on top and then slowly sink through the dry ingredients as the cake cooks.
  4. Cover the slow cooker with the lid and cook on HIGH for 2.5 hours. Do not open the lid during cooking, as this releases heat and steam and can affect the texture of the cake.
  5. After 2.5 hours, carefully remove the lid. The cake should be puffed and spongy on top, with a glossy hot fudge sauce bubbling around the edges. To check doneness, insert a toothpick into the center of the cake; it should come out with moist crumbs, not raw batter.
  6. Using a large spoon or ladle, scoop out portions of the warm chocolate cake, making sure to include some of the hot fudge sauce from the bottom of the slow cooker. Transfer to serving bowls.
  7. Place a scoop of vanilla bean ice cream on top of each warm cake serving. Spoon extra hot fudge sauce from the slow cooker over the ice cream and serve immediately.
