Tips for success
For the most tender ribs, cook them on low rather than high. The low-and-slow method gives the collagen time to break down, resulting in meat that falls off the bone.
If you're short on time, you can cook on high for 3 to 4 hours, but the texture won't be quite as silky. Always let the ribs rest for at least 10 minutes after cooking to allow the juices to redistribute.
To get a caramelized crust, you can place the cooked ribs under the broiler for 2 to 3 minutes after they come out of the slow cooker. Brush with a little extra sauce and broil until the edges are charred and sticky. This step is optional but adds a nice smoky finish. Watch carefully to prevent burning.
Variations
- Spicy Chipotle Ribs: Replace the molasses garlic BBQ sauce with a chipotle BBQ sauce and add 2 minced chipotle peppers in adobo. The heat balances the sweetness of the onions and brown sugar for a smoky, spicy kick.
- Honey Garlic Ribs: Swap the molasses garlic BBQ sauce for a honey garlic sauce (1/2 cup honey, 1/4 cup soy sauce, 4 cloves garlic, and 2 tablespoons ketchup). Reduce the brown sugar to 1/4 cup for a sweeter, less smoky flavor.
- Root Beer Ribs: Use a root beer-based BBQ sauce or add 1 cup of root beer to the slow cooker. The soda adds a deep sweetness and helps tenderize the meat. Omit the brown sugar if the sauce is sweet enough.
- Smoky Maple Ribs: Use a maple-flavored BBQ sauce and add 2 tablespoons of maple syrup to the glaze. The maple pairs beautifully with the onions and adds a subtle woodsy sweetness.
Storage and make-ahead
- Fridge
- Store leftover ribs in an airtight container with some sauce in the refrigerator for up to 4 days. Reheat gently to keep them moist.
- Freezer
- Freeze cooked ribs in a freezer-safe container with sauce for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat ribs in a 300°F oven, covered, for 20 to 30 minutes, or in the microwave in 30-second bursts until heated through.
Store leftover ribs in an airtight container with some of the sauce in the refrigerator for up to 4 days. The ribs will become even more tender as they sit, and the flavors will meld. Reheat gently in the microwave or in a covered skillet over low heat with a splash of water or sauce to keep them moist.
The ribs can be fully cooked up to 2 days ahead and stored in the refrigerator. To reheat, place them in a baking dish with some of the sauce, cover with foil, and warm in a 300°F oven for 20 to 30 minutes.
You can also freeze the cooked ribs for up to 3 months; thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the ribs whole on a large platter with the caramelized onions spooned over the top. Provide plenty of napkins and a stack of small plates for the bones.
These ribs pair well with coleslaw, cornbread, or a crisp green salad to cut through the richness. For a heartier meal, serve them over creamy mashed potatoes or with roasted sweet potatoes.
For a casual gathering, cut the racks into individual ribs and serve as a finger food. The sauce is delicious over rice or quinoa, so consider offering a grain on the side.
Leftover sauce can be used as a dipping sauce for the ribs or drizzled over roasted vegetables. The ribs are also excellent in sandwiches, piled on a soft bun with pickles and extra sauce.

Slow-Cooker Molasses Garlic Baby Back Ribs

Ingredients
- 2 racks baby back pork ribs (about 1 1/2 lb each)
- 2 large Vidalia onions, thinly sliced
- 1/2 cup packed light brown sugar
- 1 1/2 cups molasses garlic BBQ sauce
Instructions
- Place the two racks of baby back ribs side by side in the bottom of a 6-quart slow cooker, curling them slightly if needed to fit. Scatter the sliced Vidalia onions evenly over the ribs, then sprinkle the brown sugar over the onions and ribs.
- Pour the molasses garlic BBQ sauce in thick ribbons over the onions and ribs, using a spatula to spread it evenly so the top of the ribs are well coated. Do not stir, as the sauce will melt and baste the meat during cooking.
- Cover the slow cooker with the lid and cook on low for 6 to 7 hours, until the meat is fork-tender and nearly falling off the bone. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for 10 minutes. This allows the juices to redistribute and the meat to set slightly, making it easier to handle.
- Using a carving fork, lift the ribs out of the slow cooker and place them on a serving platter or individual plates. Spoon the caramelized onions and extra sauce over the top before serving. Let it rest for 3 minutes before slicing.
