Tips for success
For the best texture, use a slow cooker that heats evenly and keep the lid on for the full cooking time. If your slow cooker runs hot, check the cake at the 2-hour mark and reduce the cooking time if needed.
The cake is best served warm, so if you need to hold it, keep it on the warm setting for up to 30 minutes.
To make the dessert more decadent, serve it with a drizzle of extra caramel and a scoop of high-quality coffee ice cream.
The flaky sea salt is not just for garnish—it brightens the flavors and balances the sweetness. For a crunchy topping, sprinkle a few chocolate shavings or crushed espresso beans over the ice cream.
Variations
- Mocha Peanut Butter: Swirl 1/2 cup of creamy peanut butter into the batter along with the caramel. Top with chopped peanuts for extra crunch. The peanut butter adds a nutty richness that pairs well with the chocolate and espresso.
- White Chocolate Raspberry: Replace the salted caramel with raspberry jam and use white chocolate cake mix. Add 1/2 cup fresh raspberries on top before cooking. The tartness of the raspberries balances the sweet white chocolate.
- Spiced Mocha: Add 1 teaspoon of ground cinnamon and 1/4 teaspoon of cayenne pepper to the dry cake mix. The warm spice and subtle heat complement the coffee and chocolate, giving the dessert a Mexican-inspired twist.
- Salted Caramel Cheesecake Swirl: Soften 4 oz cream cheese and beat with 1/4 cup sugar and 1 egg. Drop spoonfuls of the cream cheese mixture over the batter before adding the caramel. Swirl gently with a knife for a marbled effect.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken when chilled; reheat gently before serving.
- Freezer
- Freeze the cooled cake in an airtight container for up to 3 months. Thaw overnight in the refrigerator and reheat in the microwave or slow cooker.
- Reheat
- Reheat individual portions in the microwave for 30-60 seconds or in a 350°F (175°C) oven for 10-15 minutes until warm.
Store leftover cake in an airtight container in the refrigerator for up to 4 days. The sauce will thicken when chilled, so reheat individual portions in the microwave or on the stovetop until warm.
The cake can also be kept at room temperature for up to 2 hours, but refrigeration is recommended for longer storage.
The batter can be mixed and layered in the slow cooker up to 24 hours in advance. Cover and refrigerate the slow cooker insert, then let it sit at room temperature for 30 minutes before cooking.
You may need to add 15-20 minutes to the cooking time. The assembled cake can also be cooked, cooled, and reheated in the slow cooker on low for 1 hour before serving.
Serving ideas
Serve the mocha lava cake warm, scooped into bowls with a generous spoonful of the mocha caramel sauce from the bottom of the slow cooker. Top each serving with a scoop of coffee ice cream, a drizzle of salted caramel, and a pinch of flaky sea salt. The contrast of warm cake and cold ice cream is irresistible.
This dessert is perfect for a casual gathering or a cozy night in. It pairs beautifully with a cup of espresso or a glass of cold milk. For a more elegant presentation, serve in clear glass bowls to show off the layers of cake and sauce. The recipe serves 8, but you may find yourself going back for seconds.

Crockpot Mocha Lava Cake with Salted Caramel

Ingredients
- 1 box dark chocolate cake mix
- 2 tbsp espresso powder
- 2 large eggs
- 1/2 cup water
- 1/3 cup vegetable oil
- 3/4 cup salted caramel sauce
- 1/4 cup cocoa brown sugar topping
- 1 1/2 cups hot brewed espresso
- coffee ice cream, for serving
- salted caramel sauce, for serving
- flaky sea salt, for serving
Instructions
- In a large mixing bowl, combine the dark chocolate cake mix, espresso powder, eggs, water, and vegetable oil. Whisk until smooth and well combined, with no dry lumps remaining. The batter will be thick and glossy.
- Pour the chocolate batter into the slow cooker and spread it into an even layer. Drizzle the salted caramel sauce over the top, then sprinkle the cocoa brown sugar topping evenly over the surface.
- Carefully pour the hot brewed espresso over the entire surface. Do not stir. The espresso will pool on top and create a sauce layer as it cooks.
- Cover the slow cooker and cook on HIGH for 2 1/2 hours. Do not lift the lid during the first 2 hours. The cake will rise and set while the espresso transforms into a rich mocha caramel fudge sauce underneath.
- After 2 1/2 hours, insert a toothpick into the center of the cake. It should come out mostly clean with a few moist crumbs. The edges will look dark and fudgy, and the sauce beneath will be bubbling.
- Turn off the slow cooker and let the cake rest for 10 minutes. Scoop warm portions into bowls, spoon some of the mocha caramel sauce over the top, and finish with a scoop of coffee ice cream, an extra drizzle of salted caramel, and a sprinkle of flaky sea salt.
