Tips for success

For a deeper flavor, you can sear the pork loin in a hot skillet with a small amount of oil before placing it in the slow cooker. While this is an optional step, it helps to develop a flavorful crust on the exterior of the meat.

Just be sure to handle the raw meat safely, cleaning the skillet and surrounding surfaces thoroughly after searing. This extra effort can add a wonderful complexity to the final dish, though the slow cooker method is delicious on its own.

If you prefer a thicker sauce, you can remove the cooked pork from the slow cooker and whisk in a small amount of cornstarch slurry (equal parts cornstarch and cold water) into the remaining juices.

Turn the slow cooker to the high setting and let it bubble for a few minutes until the sauce reaches your desired consistency. This simple adjustment can elevate the dish, making the buttery, savory juices even more luxurious when poured over the sliced pork or served alongside side dishes like mashed potatoes.

Variations

  • Spicy Mississippi Pork: Add a teaspoon of red pepper flakes or a few sliced jalapeños along with the pepperoncini to increase the heat level. This variation provides a nice kick that balances the richness of the butter.
  • Garlic Herb Pork: Toss in four to five cloves of smashed garlic and a tablespoon of dried thyme or rosemary. These herbs complement the pork perfectly and add a fresh, aromatic dimension to the savory sauce.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure the meat is cooled within 2 hours of cooking.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently in a saucepan over medium-low heat with a splash of water or broth, or microwave in 30-second intervals until warmed through.

If you have leftovers, allow them to cool to room temperature for no more than 2 hours before transferring them to an airtight container. Keep the pork submerged in some of its cooking juices to prevent it from drying out in the refrigerator.

Properly stored in the coldest part of your fridge, the pork will maintain its quality for up to 3 days. Always ensure your storage containers are sealed tightly to keep the flavors fresh and prevent any cross-contamination with other foods in your refrigerator.

You can prepare the pork loin by seasoning it and placing it in the slow cooker insert, then covering it and keeping it in the refrigerator for up to 24 hours before you are ready to cook. When you are ready to start, simply remove the insert from the fridge and place it directly into the slow cooker base. Note that you may need to add an extra 30 minutes to the total cooking time if the meat starts from a cold temperature.

Serving ideas

Serve the sliced pork loin warm, drizzled generously with the buttery juices and topped with a few of the cooked pepperoncini. This dish pairs exceptionally well with creamy mashed potatoes, steamed green beans, or a crisp garden salad to balance the richness of the meat.

The savory sauce is also excellent when soaked up by crusty bread or served over a bed of buttery egg noodles, making it a versatile main course that can be adapted to suit whatever side dishes you have available in your kitchen.

Consider serving the pork in a more casual style by shredding the meat directly into the buttery juices instead of slicing it. This creates a pulled pork texture that is perfect for piling onto soft slider buns or serving as a hearty topping for baked potatoes. Regardless of how you choose to serve it, ensure the meat is warm and the sauce is drizzled over the top just before serving to maximize the flavor and presentation of this comforting, slow-cooked meal.

Frequently asked questions

Can this be made with a different cut of meat?
Yes, a pork shoulder or pork butt can be used, though these cuts have more fat and may require a longer cooking time to become tender. Avoid lean cuts like tenderloin, which can dry out easily.
Why does the sauce seem greasy?
The sauce contains a significant amount of butter, which is part of the recipe's character. If you find it too greasy, you can skim the excess fat from the surface after the cooking is finished.
Is it necessary to add extra liquid?
Generally, no. The pork loin and the butter release enough liquid during the slow cooking process to create a delicious sauce. Adding extra liquid may result in a thinner, less flavorful sauce.
