Before you start

Ensure the slow cooker is clean and positioned on a level surface away from heat-sensitive materials. Prepare the chicken by patting it dry with paper towels to ensure the seasonings adhere well.

Slice the onions into thin, uniform strips to promote even cooking. Keep the Maroilles cheese chilled until the moment you are ready to slice it, as it is much easier to handle when cold.

Ingredients at a glance (4)
  • 4 lbs chicken thighs, bone-in and skin-on
  • 2 large onions, thinly sliced
  • 1/2 tsp ground black pepper
  • 8 oz Maroilles cheese, thick slices

Instructions

Layering the Ingredients

  1. Prepare the Base
Place the raw chicken thighs into the bottom of the slow cooker basin. Arrange them in a single layer to ensure even cooking. Scatter the thinly sliced onions over the top of the chicken pieces, ensuring they are evenly distributed to provide flavor and moisture during the long cooking process.
Look for Chicken thighs are arranged at the bottom with onions spread evenly over.
Tip Slice the onions uniformly so they soften and melt into the sauce at the same rate.

The chicken thighs should be spread in a single layer at the base of the slow cooker, covered evenly with the sliced onions.

The arrangement should look orderly, providing a flat surface for the cheese slices to rest upon during the cooking phase.

Seasoning and Assembly

  1. Season and Add Cheese
Generously sprinkle ground black pepper over the chicken and onions. Place the thick slices of Maroilles cheese directly on top of the seasoned chicken. The cheese will slowly melt during the cooking process, creating a rich and aromatic sauce that coats the meat thoroughly.
Look for Cheese slices are placed on top of the peppered chicken and onions.
Tip Ensure the cheese is sliced into thick pieces to prevent it from dissolving completely too early.

The pepper is distributed over the chicken and onions, and the Maroilles cheese is positioned on top. Everything should look neat and ready for the slow cooker lid to be sealed for the duration of the cooking cycle.

Cooking and Finishing

  1. Slow Cook and Serve
Cover the slow cooker and cook on low for 4 hours. Once the time is up, verify that the chicken reaches an internal temperature of 165°F (74°C). Allow the chicken to rest for at least 5 minutes before serving to ensure the juices redistribute within the meat.
Look for Chicken is tender, glossy, and coated in a creamy, melted cheese sauce.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer inserted into the thickest part of the thigh to check for doneness.

After four hours, the chicken should appear glossy and tender. The cheese will have melted into a creamy sauce that coats the chicken pieces. Verify that the chicken is fully cooked and resting properly before serving to ensure the best texture.

Common mistakes

Avoid lifting the lid of the slow cooker during the cooking process, as this releases heat and moisture, significantly increasing the cooking time. Do not overcrowd the slow cooker, as this can lead to uneven cooking.

Ensure the cheese is placed on top of the chicken rather than buried at the bottom, which allows it to melt gradually and properly emulsify with the juices.

How to tell it’s done

The chicken is done when the meat is tender and easily pulls away from the bone. The cheese should be completely melted and incorporated into a smooth, glossy sauce.

Use a digital meat thermometer to confirm the internal temperature has reached 165°F (74°C) at the thickest part of the thigh. Let the chicken rest for 5 minutes after cooking to allow the juices to settle.

  • Poultry: 165°F (74°C) in the thickest part
