Tips for success
For the best texture, choose country-style ribs that are well-marbled and about 1 to 1 1/2 inches thick. If the ribs are very lean, they may dry out—look for ribs with some fat marbling.
If you prefer a spicier dish, add a pinch of cayenne or a few dashes of hot sauce to the barbecue sauce before pouring it over.
The sauce will thicken as the ribs cook, but if you prefer a thicker glaze, you can transfer the sauce to a saucepan after the ribs are done and simmer it on the stovetop until reduced.
Conversely, if the sauce becomes too thick, add a splash of water or apple juice to loosen it.
Variations
- Spicy Maple Bourbon Ribs: Add 1-2 minced chipotle peppers in adobo sauce to the barbecue sauce before pouring it over the ribs. The smoky heat balances the sweetness for a bold, spicy-sweet glaze.
- Honey Garlic Ribs: Replace the maple bourbon barbecue sauce with a mixture of 1/2 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, and 1 tablespoon apple cider vinegar. Cook as directed.
- Root Beer BBQ Ribs: Substitute the barbecue sauce with 1 1/2 cups root beer and 1 cup ketchup, plus 2 tablespoons brown sugar and 1 tablespoon Worcestershire sauce. Cook as directed for a sweet, tangy twist.
- Smoky Chipotle Ribs: Stir 2 teaspoons smoked paprika and 1 teaspoon chipotle powder into the barbecue sauce. For extra smokiness, add 1/2 teaspoon liquid smoke. Cook as directed.

Serving ideas
Serve the ribs with extra sauce spooned over the top and the caramelized onions scattered on top.
They pair beautifully with creamy coleslaw, cornbread, or a simple green salad. The sweet and smoky flavor also works well with roasted vegetables or mashed potatoes.
For a casual gathering, set out the slow cooker and let guests serve themselves.
The ribs are also great shredded and piled onto buns for pulled pork sandwiches, or served over rice or noodles for a hearty bowl. Leftovers can be repurposed into tacos, quesadillas, or pasta dishes.

Slow-Cooker Maple Bourbon Country Pork Ribs

Ingredients
- 3 lb boneless country-style pork ribs
- 2 medium Vidalia onions, thinly sliced
- 1/4 cup packed light brown sugar
- 1 1/2 cups maple bourbon barbecue sauce
Instructions
- Place the boneless country-style pork ribs in the bottom of a 6-quart slow cooker, spreading them into an even layer. Scatter the sliced Vidalia onions over the top of the ribs, then sprinkle the brown sugar evenly over the onions.
- Pour the maple bourbon barbecue sauce over the ribs and onions, using a spatula to spread it evenly so all the meat is coated. The sauce will look thin at this point, but it will reduce and thicken as the ribs cook.
- Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the ribs are fork-tender and easily pull apart. The sauce will bubble and thicken as the meat releases its juices. Let it rest for 3 minutes before slicing.
- Test the ribs with a fork: they should shred easily and the internal temperature should read at least 145°F (63°C) on an instant-read thermometer. If not done, continue cooking and check again after 30 minutes. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for 5 to 10 minutes. This allows the juices to redistribute and the meat to become even more tender.
- Using a fork, lift the ribs out of the slow cooker and transfer them to a serving plate. Spoon the caramelized onions and extra sauce over the top. Serve hot, with the remaining sauce on the side.
