Tips for success

For an extra touch of decadence, toast the bacon in a skillet with a pinch of brown sugar before chopping to enhance its smoky sweetness. If you find the glaze is too thin at the two-hour mark, leave the lid off and cook for an additional ten minutes on high to allow the moisture to evaporate and the syrup to concentrate further into a sticky, rich coating.

If you are serving this for a brunch, prepare the custard mixture in a separate pitcher to make pouring easier. You can also place a paper towel under the slow cooker lid during the final thirty minutes of cooking to absorb excess condensation, which helps prevent the top of the cinnamon rolls from becoming overly damp.

This simple trick ensures the rolls maintain a beautiful, light texture while the bottom remains perfectly glazed and flavorful.

Variations

  • Pecan Maple Bacon: Add 1/2 cup of toasted chopped pecans during the layering phase to introduce a nutty crunch that pairs beautifully with the maple and smoky bacon flavors.
  • Spiced Apple Variation: Incorporate one peeled and diced apple into the layers for a fresh, fruity element that complements the cinnamon and maple notes of the casserole.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Ensure the casserole has cooled for no more than 2 hours before placing it in the refrigerator.
Freezer
Not recommended, as the texture of the cinnamon rolls will become mushy upon thawing.
Reheat
Reheat individual portions in the microwave for 30 to 45 seconds until warm, or in an oven at 300°F (150°C) until heated through.

Store any leftovers in an airtight container to maintain the moisture of the cinnamon rolls. Because of the cream and egg content, the casserole must be refrigerated promptly. It will stay fresh for up to three days.

When storing, try to keep the bacon topping separate if possible to preserve its crunch, though it will naturally soften once combined with the maple glaze over time. Ensure the container is sealed tightly to prevent the rolls from absorbing other odors from the refrigerator.

You can prepare the bacon and chop the rolls the night before to save time in the morning. However, it is best to mix the custard and pour it over the rolls just before starting the slow cooker.

This prevents the rolls from becoming soggy or absorbing too much liquid overnight, ensuring they maintain the perfect texture. If you must assemble it ahead of time, keep the custard mixture separate and pour it over the rolls immediately before turning on the heat.

Serving ideas

Serve this casserole warm, ideally straight from the slow cooker, to ensure the glaze remains fluid and the rolls stay soft. Use a large serving spoon to scoop portions, making sure to scrape the bottom of the slow cooker to include the concentrated maple-bacon syrup with each serving. Providing a small side of extra warmed maple syrup can be a nice touch for those who enjoy an even sweeter breakfast experience.

Pair this rich dish with something acidic or bitter to balance the sweetness, such as fresh berries, sliced oranges, or a pot of strong black coffee. The acidity of the fruit cuts through the heavy cream and sugar, while the bitterness of the coffee complements the smoky bacon.

This creates a well-rounded breakfast experience that feels like a special occasion, whether you are serving it for a casual weekend brunch or a holiday morning celebration.

Frequently asked questions

Can this be made in a smaller slow cooker?
Yes, but ensure you adjust the amount of cinnamon rolls to avoid overfilling the container. The rolls need space to expand during the cooking process to ensure they remain fluffy and light.
Why does the custard need to reach 160°F?
The custard contains raw eggs, which must be cooked to an internal temperature of 160°F (71°C) to ensure food safety. This temperature effectively eliminates potential bacteria, making the dish safe for everyone to consume.
Is it possible to use a different type of icing?
The recipe works best with the maple cream cheese icing included with the rolls, but a simple glaze made from powdered sugar and a splash of milk or maple syrup can be used as a substitute.

Ingredients

  • 2 cans jumbo cinnamon rolls, quartered
  • 8 strips applewood bacon, crispy and chopped
  • 3/4 cup pure maple syrup
  • 1/3 cup heavy cream
  • 3 large eggs
  • 2 tbsp bourbon
  • 1 container maple cream cheese icing
  • 1/4 cup crispy bacon crumbles for serving

Instructions

  1. Quarter each cinnamon roll using a sharp knife. In the bottom of a 6-quart slow cooker, begin layering the quartered cinnamon rolls with the chopped crispy applewood bacon, repeating until all are used.
  2. In a separate small bowl, whisk together the heavy cream, eggs, pure maple syrup, and bourbon until smooth. Pour this mixture evenly over the cinnamon roll and bacon layers in the slow cooker.
  3. Cover the slow cooker and cook on HIGH for 2 hours. The casserole is ready when the maple glaze has caramelized around the rolls. To cook the eggs through to a safe 160°F (71°C), ensure the center is fully set.
  4. Once cooked, remove the lid and drizzle the maple cream cheese icing over the warm casserole. Top with additional crispy bacon crumbles before scooping into bowls to serve while hot.
Contains: gluten, eggs, milk
Food safety: The eggs in this dish are served soft. Use pasteurised eggs for pregnant women, young children, older adults, and anyone with a weakened immune system.
