Tips for success
For the best texture, slice the skirt steak against the grain into thin strips. This shortens the muscle fibers, so they break down more easily during cooking.
If you prefer larger chunks, cut the strips into 2-inch pieces—they'll still become tender, but will hold their shape a bit more. Don't trim all the fat; a little fat adds flavor and moisture.
The mango should be ripe but still firm so it doesn't turn to mush during the long cook. If fresh mango isn't in season, frozen diced mango works well—just thaw and drain it first.
For extra heat, add a minced habanero pepper with the salsa, or stir in a teaspoon of hot sauce before serving. Taste the salsa beforehand to gauge its spiciness.
Variations
- Chicken version: Swap the skirt steak for boneless, skinless chicken thighs. Cook on low for 4 to 5 hours, or until the chicken shreds easily. The mango and habanero flavors work beautifully with poultry.
- Mild heat: Use a mild tomato salsa instead of habanero lime salsa, and add a diced bell pepper for sweetness. The cheese and mango still provide plenty of flavor without the spice.
- Taco night: Serve the steak and cheese mixture in warm corn tortillas with shredded cabbage, pickled onions, and a squeeze of lime. Turn it into a build-your-own taco bar for a fun dinner.
- Extra smoky: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of ground cumin to the steak before layering the other ingredients. This adds a deep, smoky note that pairs well with the sweet heat.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. The sauce may thicken; stir in a splash of water or broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating gently.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a splash of broth if needed to loosen the sauce.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Reheat gently in the microwave or on the stovetop with a splash of water or broth to loosen the sauce. The cheese may separate slightly upon reheating, but stirring will bring it back together.
You can assemble the entire slow cooker pot the night before—layer the steak, mango, salsa, cilantro, and cheeses, then cover and refrigerate. In the morning, place the pot in the slow cooker base and cook on low as directed, adding about 30 minutes to the cooking time to account for the cold start. This makes it perfect for busy weekdays.
Serving ideas
Serve this dish over Spanish red rice to soak up the rich, spicy sauce. The rice's subtle tomato flavor complements the sweet mango and tangy habanero.
For a low-carb option, serve it in lettuce cups or over cauliflower rice. Warm corn or flour tortillas are also excellent for making tacos or burritos—just pile the steak and cheese into the tortillas and add a squeeze of lime.
Garnish with extra chopped cilantro and a wedge of lime for brightness. A spoonful of sour cream or crema can temper the heat if you like. For a complete meal, add a simple side of black beans or a crisp green salad. This dish is hearty enough to stand alone, but it also pairs well with grilled vegetables or a light slaw.

Slow Cooker Mango Habanero Skirt Steak with Oaxaca Cheese

Ingredients
- 2 lb skirt steak, sliced into strips
- 2 cups diced ripe mango
- 1 cup habanero lime salsa
- 1/2 cup chopped fresh cilantro
- 8 oz Oaxaca cheese, shredded
- 8 oz Mexican four-cheese blend, shredded
- 4 cups cooked Spanish red rice, for serving
Instructions
- Place the sliced skirt steak strips in an even layer at the bottom of the slow cooker. Press them down gently so they cover the base without overlapping too much, which helps them cook evenly.
- Scatter the diced mango cubes over the steak, followed by the habanero lime salsa. Sprinkle the chopped cilantro over the top. Do not stir—the layers will meld as they cook.
- Generously shower the shredded Oaxaca cheese and Mexican four-cheese blend over the entire surface, covering the mango and salsa completely. Leave the lid off until ready to cook.
- Cover the slow cooker and cook on low for 4 to 6 hours, until the steak is fork-tender and the cheese is melted and blistered around the edges. Avoid opening the lid during the first 3 hours to retain heat. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the steak rest in the sauce for at least 3 minutes. This allows the juices to redistribute and the meat to reach a safe internal temperature of 145°F (63°C) if not already there.
- Spoon the warm Spanish red rice onto plates. Using a slotted spoon, lift the steak and cheesy sauce from the slow cooker and pile it over the rice. Drizzle with extra sauce from the pot as desired.
