Tips for success
For the best flavor, use a ripe but firm mango. If fresh mango isn't available, frozen diced mango works well—just thaw and drain before adding.
The habanero salsa can be substituted with your favorite hot salsa, but the fruity heat of habanero complements the mango beautifully. Adjust the amount to your spice tolerance.
To make this dish even easier, you can assemble the ingredients in the slow cooker insert the night before and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed. This is a great make-ahead option for busy days. Leftovers can be stored in the refrigerator for up to 4 days.
Variations
- Chicken Version: Swap the skirt steak for boneless, skinless chicken thighs. Cook on low for 4 to 5 hours until the chicken shreds easily. The sauce works beautifully with poultry.
- Extra Veggies: Add sliced bell peppers and onions to the slow cooker along with the beef. They'll soften and absorb the sauce, adding bulk and color.
- Milder Heat: Use a mild salsa instead of habanero and add a diced bell pepper for sweetness. This version is family-friendly and still full of flavor.
- Creamy Avocado Topping: Top each serving with slices of fresh avocado or a spoonful of guacamole. The cool, creamy avocado balances the heat and adds a fresh element.
Storage and make-ahead
- Fridge
- Store beef and sauce in the refrigerator for up to 4 days. Reheat gently before serving. Tortillas keep separately.
- Freezer
- Freeze the beef and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a splash of water or broth if the sauce is too thick.
Store any leftover beef and sauce in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently in the microwave or on the stovetop until hot. The tortillas are best stored separately.
The beef can be cooked up to 2 days ahead. Cool completely, then refrigerate in an airtight container.
Reheat in a saucepan over medium heat, adding a splash of water or broth if needed to loosen the sauce. Warm tortillas just before serving. This makes an excellent meal prep option for lunches.
Serving ideas
Serve the fajitas with warm flour tortillas, and let everyone build their own. Offer extra toppings like diced avocado, lime wedges, or a dollop of sour cream.
A side of Mexican rice or black beans rounds out the meal. The creamy, spicy beef is also delicious over rice or in a burrito bowl.
For a lighter option, serve the beef in lettuce cups or over a bed of greens. The sauce is rich and satisfying, so a little goes a long way. This dish pairs well with a cold beer or a citrusy margarita. The sweet-heat flavor is sure to be a hit at any gathering.

Slow-Cooker Mango Habanero Skirt Steak Fajitas

Ingredients
- 2 lb beef skirt steak, sliced into strips
- 2 cups diced ripe mango
- 1 cup habanero lime salsa
- 1/2 cup chopped fresh cilantro
- 1 cup sour cream
- 2 cups shredded Monterey Jack cheese
- Warm flour tortillas, for serving
Instructions
- Place the sliced skirt steak strips in the bottom of the slow cooker in an even layer. Scatter the diced mango, habanero lime salsa, and chopped cilantro over the meat. Dollop the sour cream over the top, then sprinkle with the shredded Monterey Jack cheese. Do not stir.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the beef is tender and easily shreds with a fork. Do not lift the lid during the first 4 hours to keep the heat steady. Let it rest for 3 minutes before slicing.
- Once the beef is tender, use two forks to shred it directly in the slow cooker. Stir everything together so the sauce coats the meat evenly. Let the beef rest for at least 3 minutes before serving.
- While the slow cooker finishes, warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in foil and place in a 350°F (175°C) oven for 10 minutes. Keep them covered until serving.
- Using a slotted spoon, pile the shredded beef and sauce onto the warm tortillas. Fold or roll the tortillas and serve immediately. Garnish with extra cilantro if desired.
- Spoon any remaining sauce over the top of the filled tortillas. Serve hot, with extra salsa or sour cream on the side if you like. Enjoy immediately.
