Before you start

Before you start, chop the mango into chunks and mince the habanero peppers (wear gloves). Mince the garlic and juice the lime. Measure the honey, apple cider vinegar, and salt. Place all the ingredients in the slow cooker as directed.

Have your tortillas, slaw, and cilantro ready for serving. If you plan to char the tortillas, set a skillet nearby. The prep takes about 15 minutes, and then the slow cooker does the rest.

Ingredients at a glance (11)
  • 3 lb boneless, skinless chicken breasts
  • 2 cups ripe mango chunks
  • 2 habanero peppers, minced
  • 1/3 cup honey
  • 2 tbsp apple cider vinegar
  • 3 cloves garlic, minced
  • 2 tbsp lime juice
  • 1 tsp salt
  • 12 small corn or flour street taco tortillas, charred
  • 2 cups red cabbage slaw
  • 1/4 cup fresh cilantro leaves

Instructions

Layer and Cook

  1. Layer the Ingredients
Place the chicken breasts in the bottom of a 6-quart slow cooker. Scatter the mango chunks, minced habanero peppers, garlic, honey, apple cider vinegar, lime juice, and salt over the chicken. Use a spoon or tongs to gently toss everything so the chicken is coated with the mixture.
Look for The chicken should be well coated with the sweet, spicy, tangy mixture.
Tip Wear gloves when mincing habaneros, and avoid touching your face.
  2. Cook on Low
Secure the lid on the slow cooker. Cook on LOW for 4 hours, until the chicken is tender and easily shreds. The mango will soften and melt into a glossy glaze.
Look for After 4 hours, the chicken should be fork-tender and the sauce thickened.
Tip Resist lifting the lid during cooking — it releases heat and extends cook time.

After layering all the ingredients, the slow cooker will smell sweet and spicy as it cooks. The chicken should be completely submerged in the mango mixture. After 4 hours, the chicken will be fork-tender, and the sauce will have reduced into a thick, glossy glaze. The mango chunks will have melted, and the habanero heat will have infused the liquid.

Shred and Coat

  1. Shred the Chicken
Turn off the slow cooker. Using two forks, shred the chicken directly in the sauce. Stir well so every piece is coated with the mango habanero glaze. Let the shredded chicken rest in the sauce for 5 minutes to absorb more flavor.
Look for The chicken should be in bite-sized shreds, glistening with the golden sauce.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip For extra flavor, let the chicken sit in the sauce while you warm the tortillas.

Once the chicken is shredded, it should be moist and coated in the golden-orange glaze. The sauce should cling to the meat rather than pool at the bottom. The aroma is intensely fruity and spicy. Taste a small piece to check the heat level and seasoning. If you prefer more heat, you can stir in a little minced habanero at this point.

Char and Assemble

  1. Char the Tortillas
Heat a dry skillet or griddle over medium-high heat. Working in batches, char each tortilla for 20–30 seconds per side, until lightly blistered and pliable. Keep warm wrapped in a clean kitchen towel.
Look for Tortillas should have light char marks and be soft enough to fold.
Tip Charring brings out the corn's nutty flavor and makes them sturdy for filling.
  2. Assemble and Serve
Fill each charred tortilla with a generous portion of the pulled chicken. Top with red cabbage slaw and fresh cilantro leaves. Serve immediately, with extra lime wedges if desired.
Look for Tacos should be colorful, with juicy chicken, crunchy slaw, and bright cilantro.
Tip Serve extra slaw on the side so everyone can add more crunch.

The tortillas should be warm, pliable, and lightly charred. When you fill them with the chicken, the juices should soak into the tortilla without making it soggy.

The slaw adds a bright, crunchy contrast, and the cilantro brings a fresh herbal note. The finished tacos should look vibrant and inviting, with the glossy chicken peeking out from the toppings.

Common mistakes

One common mistake is lifting the lid to check on the chicken — this releases heat and extends cooking time. Another is using unripe mangoes, which won’t break down into a sweet glaze; they’ll stay firm and tart.

Overcrowding the slow cooker with too many chicken breasts can also prevent even cooking — use the recommended amount. Finally, don’t skip charring the tortillas: that smoky flavor is essential to balance the sweet-heat chicken.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. The sauce should be thickened and glossy, with the mango completely softened.

If the chicken isn’t tender after 4 hours, continue cooking in 30-minute increments. Once shredded, taste and adjust seasoning with salt or extra lime juice if needed.

  • Poultry: 165°F (74°C) in the thickest part
