Tips for success

For the best flavor, use a ripe, fragrant mango. If your mango is underripe, the dish will be less sweet and more tart. You can also add a tablespoon of honey or brown sugar to balance the heat.

If you prefer extra heat, add a minced habanero pepper along with the salsa. For a smokier flavor, use chipotle salsa instead of habanero.

The cheese blanket is what makes this dish special. Use a combination of Oaxaca and a Mexican four-cheese blend for the best melt and flavor.

If you want a crisper cheese top, you can broil the slow cooker insert for a few minutes after cooking, but be careful — the insert may not be broiler-safe. Check the manufacturer's instructions.

Variations

  • Chicken Version: Swap the pork shoulder for boneless, skinless chicken thighs. Cook on low for 6 hours or high for 4 hours, until the chicken shreds easily. The cheese and mango sauce work perfectly with chicken.
  • Extra Spicy: Add a minced habanero pepper along with the salsa, or use a hotter salsa. For a smoky kick, include a chipotle pepper in adobo sauce. Adjust the heat to your preference.
  • Pineapple Twist: Replace half of the mango with diced pineapple for a different tropical sweetness. The pineapple adds a bright, tangy note that complements the habanero.
  • Low-Carb Bowl: Serve the carnitas over cauliflower rice or a bed of greens instead of Spanish rice. The cheesy, saucy pork is satisfying on its own or with a simple salad.

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave until hot. The flavors deepen overnight. Let leftovers cool completely, then keep them covered so they stay moist and full of flavor.

You can assemble the entire dish the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. Add 30 minutes to the cooking time if starting from cold.

Serving ideas

Serve the carnitas over steamed Spanish rice, with a side of warm tortillas, or as a filling for tacos and burritos.

Top with fresh cilantro, diced avocado, or a squeeze of lime. The sweet-heat glaze pairs beautifully with cool, creamy toppings like sour cream or a simple slaw.

This dish also makes a fantastic topping for nachos or a hearty filling for quesadillas. For a low-effort dinner, pile it onto toasted bread with melted cheese for a carnitas melt.

Leftovers are just as delicious the next day, so make extra if you want to enjoy it twice.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, the entire dish can be assembled the night before and stored in the refrigerator. In the morning, place the insert in the slow cooker and cook as directed. The cooking time may need to be increased by about 30 minutes if starting from cold.
What can be used instead of Oaxaca cheese?
Mozzarella or Monterey Jack are excellent substitutes. They melt similarly and have a mild, creamy flavor. For a more authentic Mexican flavor, use queso Chihuahua. The Mexican four-cheese blend can also be used entirely.
How spicy is this dish?
The heat level depends on the habanero salsa used. Habanero salsa is typically quite spicy, but the sweetness of the mango and the richness of the cheese balance it. For a milder version, use a mild salsa and add a pinch of cayenne or a diced jalapeño instead.
Can this recipe be cooked on high instead of low?
Yes, the pork can be cooked on high for 5 hours instead of low for 8 hours. The texture may be slightly less tender, but it will still be delicious. Always check that the pork reaches an internal temperature of at least 145°F (63°C).
What is the best way to reheat leftovers?
Reheat leftovers in a saucepan over medium heat, stirring occasionally, until hot and bubbling. Add a splash of water or chicken broth if the mixture seems dry. The microwave also works well for a quick reheating.

  • 8 oz shredded Mexican four-cheese blend
  • 1/2 cup fresh orange juice
