Tips for success
For even more flavor, sear the chicken cubes in a hot skillet with a little oil before adding them to the slow cooker. This adds a golden crust and deepens the savory notes.
If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it in during the last 15 minutes of cooking. Let it bubble until thickened. You can also add a pinch of cayenne or red pepper flakes for heat, but the recipe as written is mild.
To make this a complete meal, serve over mashed potatoes, rice, or even polenta. The sauce is delicious soaked up by crusty bread. If you have leftover mango, you can dice it and add it fresh at the end for a brighter, fresher flavor contrast.
For a change, swap the red bell pepper for diced pineapple or peaches — both work well with the bourbon glaze. Just keep the total fruit amount similar to avoid making the dish too sweet.
Variations
- Spicy Mango Chicken: Add 1 teaspoon of chili flakes or a diced jalapeño along with the peppers for a spicy kick. You can also use a spicy BBQ glaze instead of the bourbon molasses version. Serve with cooling yogurt or sour cream on the side.
- Pineapple Bourbon Chicken: Replace the mango with an equal amount of pineapple chunks (fresh or canned, drained). The pineapple adds a tangy sweetness that pairs well with the bourbon glaze. Follow the same cooking instructions.
- Slow-Cooker Chicken Tacos: After cooking, shred the chicken and toss with the sauce. Serve in warm tortillas with shredded cabbage, diced avocado, and a squeeze of lime. The mango and peppers add a fresh, fruity element to the tacos.
- Coconut Rice Bowl: Serve the chicken over coconut rice (rice cooked with coconut milk and a pinch of salt). Top with toasted coconut flakes and chopped cilantro. The creamy rice complements the sweet and smoky sauce.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Let the dish cool completely before refrigerating. Reheat gently in the microwave or on the stovetop, adding a splash of water or chicken broth if the sauce has thickened too much. The flavors will continue to meld, making the leftovers even more delicious.
You can prep the ingredients up to a day in advance: cube the chicken, dice the pepper, and cube the mango, then store them separately in the fridge. When ready to cook, layer everything in the slow cooker and start.
The glaze and brown sugar can be mixed together and stored in a jar in the fridge for up to a week. You can also assemble the entire dish in the slow cooker insert, cover, and refrigerate overnight, then start cooking the next day — just add 30 minutes to the cook time.
Serving ideas
Serve the chicken bites over a bed of creamy mashed potatoes to soak up the glossy sauce. The sweetness of the mango and the smoky bourbon glaze pair beautifully with the buttery potatoes. For a lighter option, serve over steamed rice or cauliflower rice.
Add a side of green beans or a simple arugula salad with a lemon vinaigrette to cut through the richness. Garnish with chopped fresh cilantro or sliced green onions for a pop of color and freshness.
This dish also works well in tacos or over rice bowls. For a fun presentation, spoon the chicken into warm corn tortillas with a little slaw and a drizzle of extra sauce. If you have guests, set up a toppings bar with crumbled queso fresco, avocado, and pickled onions. The recipe is forgiving and versatile, so feel free to make it your own. Just remember to keep the chicken hot until serving.

Slow-Cooker Mango Bourbon Chicken Bites

Ingredients
- 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
- 2 cups ripe mango cubes (about 2 mangoes)
- 1 cup diced red bell pepper (about 1 medium)
- 1 cup bourbon molasses BBQ glaze
- 1/4 cup dark brown sugar, packed
Instructions
- Place the cubed chicken breasts in the bottom of a 6-quart slow cooker in an even layer. Scatter the mango cubes and diced red bell pepper over the chicken. Pour the bourbon molasses BBQ glaze evenly over the top, then sprinkle with the dark brown sugar. Do not stir.
- Cover the slow cooker with its lid. Set the heat to low and cook for 4 to 5 hours, or until the chicken is cooked through and tender. The sauce will bubble gently around the edges.
- After 4 hours, check the chicken by inserting an instant-read thermometer into a few cubes. The chicken is safe to eat when it reaches 165°F (74°C). If not done, continue cooking for up to 1 more hour.
- Once the chicken is cooked through, stir the mixture gently to coat all the pieces with the glaze. The mango should be soft but still hold its shape. The sauce should cling to the chicken and look glossy.
- Spoon the chicken, mango, and peppers over a bed of creamy mashed potatoes or your favorite side. Drizzle extra sauce from the slow cooker over the top. Serve hot.
