Tips for success
For the most flavorful result, brown the chicken thighs in a skillet before adding them to the slow cooker. This adds a deeper, savory note to the final dish. If you do this, sear each side for 2–3 minutes until golden, then proceed with the recipe. The extra step is worth it for special occasions.
To make the sauce extra glossy, whisk in a tablespoon of butter or a splash of apple cider vinegar just before serving. The vinegar brightens the flavors and cuts through the richness. You can also add a pinch of smoked paprika or chili powder for a subtle smokiness. Taste the sauce before serving and adjust the seasoning if needed.
Variations
- Spicy Kick: Add 1–2 tablespoons of sriracha or your favorite hot sauce to the BBQ sauce mixture. You can also include a minced jalapeño or a pinch of cayenne pepper for extra heat. The sweetness of the mandarin oranges balances the spice beautifully.
- Pineapple BBQ: Substitute crushed pineapple (drained) for the mandarin orange segments. The pineapple adds a tropical sweetness that pairs wonderfully with the smoky BBQ sauce. You can also add a splash of pineapple juice for extra flavor.
- Citrus Herb: Add the zest of one orange and a teaspoon of dried thyme or rosemary along with the ginger. This gives the dish a more aromatic, savory profile. The herbs complement the citrus and BBQ without overpowering them.
- Honey Garlic: Replace the hickory BBQ sauce with a mixture of 1/2 cup honey, 1/4 cup soy sauce, 3 cloves minced garlic, and 2 tablespoons ketchup. This creates a sticky, sweet-savory glaze that's irresistible. Omit the mandarin oranges and add a squeeze of lemon juice instead.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 4 days. Reheat gently, adding a splash of water if needed. The sauce will thicken as it cools.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 30-second bursts, stirring between, or in a saucepan over medium-low heat. Add a splash of broth or water if the sauce is too thick.
Leftover chicken can be stored in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Reheat gently in the microwave or on the stovetop, adding a splash of water or chicken broth if the sauce has thickened too much. The chicken also freezes well for up to 3 months.
This dish is perfect for meal prep. Assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start. You can also cook the full batch and freeze individual portions for quick dinners.
Serving ideas
Serve the chicken over steamed jasmine rice to soak up the delicious sauce. For a complete meal, add a side of steamed broccoli or a crisp green salad with a tangy vinaigrette.
The sweetness of the sauce pairs well with roasted vegetables like carrots or green beans. Garnish with sliced green onions or sesame seeds for a pop of color and texture.
This dish is also wonderful in tacos or sliders. Pile the shredded chicken onto soft tortillas or slider buns and top with a crunchy slaw. The sweet-and-smoky flavor works beautifully in many formats.
For a low-carb option, serve it over cauliflower rice or alongside sautéed greens. Leftovers can be used in quesadillas or as a filling for baked potatoes.
